Drying ceps in the home for the winter
There are several ways to preserve the taste andaroma of white mushrooms before the winter snow pores. One of them: drying mushrooms at home. Perhaps, this is the best recipe, how to preserve the taste of fresh borrows. After all, during pickling, the original mushroom flavor is inevitably lost, while drying it can save it to the maximum. You can easily dry the mushrooms at home by not using special equipment.
Drying for winter at home
If you live in a private house or spend summer and autumn at a dacha, then you can dry the ceps in the usual natural way:
1. Cut the boletus in large pieces (if the mushroom is small, then you can leave the hat whole), and divide the hats across.
2. Take a strong thread and thread on it mushrooms. Mushrooms should be separate from each other, that is not to touch.
3. Hang thread with mushrooms in a ventilated room. Another way of drying at home: drying in the sun. Prepare a white paper (you can use a paper) or clean matter. Arrange it so that it is illuminated by the sun. Fungi spread in one layer on paper or cloth. At night, clean up the house or close the window if the mushrooms are in the room. On average, this drying lasts a maximum of 4 days.
Drying the ceps in the oven
Drying boletus is very good and in the oven if you do not have a private or country house. This is a fairly simple and very convenient way to get dry white mushrooms.
How it's done:
1. Do not rinse the mushrooms before drying. Just clean them of the forest debris, wipe a little with a slightly damp rag and thinly cut.
2. Put the white mushrooms in just one layer, but not on the baking sheet, and on the grate - for a more even and effective drying. 3. Put the grate with mushrooms in the oven, preheat it to 65-70 degrees.
4. When inserting the grate into the oven, do not cover the door completely - leave it slightly ajar. This is necessary for good air circulation, as well as evaporation of the mushroom moisture.
5. Instead of grating, special vegetable dryers can be used for drying mushrooms. They are a sieve, which are made of stainless steel. Put the mushrooms on a sieve with a thick layer, and dry them for the first 3 hours at a low temperature. This is a kind of preparatory process before drying. Then increase the temperature to 70 degrees.
White mushrooms in the dryer
The electric dryer does not lag behind the oven in terms ofthe possibility of drying mushrooms. With it you can dry, like mushrooms, and vegetables with fruits. In contrast to the oven, the risks of frying mushrooms here are minimal, since the air in the dryer, warming up, is fed to pallets and protects the mushrooms from excessive heat.
How to cook dry mushrooms in a dryer:
1. First cut the mushrooms with small plates, the thickness of which should not exceed 3-4 mm.
2. Place chopped mushrooms on the dryer tray in one layer. Do not put mushroom slices on top of each other.
3. Switch on the electric dryer. Drying time: from six to eight hours. When the mushrooms are ready, fold them into a plastic container or cans, tightly closing with a cap nylon.
Drying the white mushrooms at home. Tricks and Secrets
1. Mushrooms for drying choose strong and young. Boroviki, having wormholes or rot, will not do.
2. Despite the fact that it is usually not recommended to wash the mushrooms before drying, you can actually wash them, but only in a general way. Rinse lightly so that moisture does not have time to soak into the mushroom.
3. To store dried mushrooms, take canvas bags - in them mushrooms will retain their wonderful aroma.
