Traditional New Year's treat of Italians: main dishes

Traditional Italian New Year's Eve consists of several dishes that are alwaysnecessarily prepare for a festive table. This includes fish dishes from cod and eel, pasta, dishes from turkey and capon. Roasted eel

Prepare the eel on a grill or frying pan. To prepare such traditional New Year treats for Italians, you will need:
- 1 kg of eel meat
- 3 cloves of garlic
- salt
- pepper
- 2 tbsp. l. olive oil
- 1 tbsp. vinegar
- 1/2 bay leaf for each portioned eel
- flour (only for the preparation of eel in a frying pan)
We begin to prepare the traditional New Yeartreat the Italians from the eel. Cut the eel carcass into pieces about 7 cm long, rinse them well and allow them to dry. When the pieces dry, they rub it with garlic. Put the pieces of eel on the skewer, inserting between them laurel leaves. Sprinkle with salt and pepper, sprinkle with olive oil and vinegar. In the marinade formed, the pieces of the eel stand for at least one hour. The eel is ready for further grilling.
If you want to fry an eel in a frying pan, do notstring it on the skewer. When the eel stays a little in the marinade, it is poured into flour and fried in a frying pan with olive oil until a beautiful golden brown crust is formed. Fried eel ready!
Neapolitan fish salad
Of course, the recipes for New Year's dishes should also include salads. Therefore, we suggest you prepare a Neapolitan fish salad. For its preparation you will need:
- 2 pcs. milling (bread, baked in the form of a bagel, which is completely dried before selling)
- 250 ml of olive oil
- 125 ml of white wine vinegar
- mayonnaise
- black olives without pits
- 1 hard boiled egg
- 1 tomato
- 1 canned cucumber
- 0.5 kg of any boiled fish
- 150 gr fillet of anchovies
- 170 g of salted capers
- 25 grams of canned tuna
- 250 gr green leaf lettuce
- 250 grams of leaves of an escarole salad
- 1 clove of garlic
- parsley greens
- table vinegar or lemon juice
- pepper
- salt (to taste)
- Fresh mint, basil or thyme (selectively)
First you need to prepare green sauce. Mix 50 gr of anchovies, tuna, 25 gr capers,garlic, finely chopped parsley, 80 ml of olive oil with a little vinegar in the blender. You can add fresh mint, basil and thyme to the sauce. The sauce should be sufficiently liquid, but not watery. If the sauce is not very liquid, you can add a little broth to it.
Now you can cook caper sauce. The remaining capers are mixed in a blender with 80 ml of olive oil, a small amount of vinegar or lemon juice, salt and pepper.
Let's start cooking salad. To begin with, dip muesli buns into a mixture of water and white wine vinegar. When they are sufficiently impregnated, they can be removed from the liquid. Crumble the mozelle on a plate in which you will serve a salad. Boiled fish are divided into three parts. One part is poured with green sauce, the second - sauce from capers, the third - with mayonnaise. Sprinkle whole leaves of salads with olive oil, sprinkle with salt and pepper.
Now you can collect salad. On the milling machine put the first part of the fish, cover with a layer of leaves of green salad and exarolla. Next, put the second part of the fish, which is covered with the remaining leaves of the salad. The third part of the fish is put on top (the top layer should be with mayonnaise). Top with mayonnaise. Decorate the salad with a tomato, egg, olives and cucumber.
