These platelet fungi belong to the familyraw russet. The most common in our latitudes are pink and white. For the first, the hat is pink (up to 15 cm in diameter), which has the shape of a hemisphere in young specimens. With age, it compacts and forms a small indentation in the central part, the edges are wrapped. The skin of the pink girl is slightly sticky, it reacts with a darkening to the touch. Flesh is dense, white with a small red, transportable. The whitish juice released on the cut or slice does not change color with time. And if in the first method the mushrooms are only soaked for a long time (in some recipes I use citric acid instead of salt), and after that the brine is prepared (the mushrooms are laid out layer by layer with salt and spices), then in the second method of cooking the wavelets are additionally boiled (the remaining brine is then poured into the mushroom weight). There are recipes for fried wavelets (hot dishes): the pretreatment is no different from the methods of harvesting salted mushrooms, but then they are fried in a pan with onions, sour cream, greens and spices.
