That's just the most popular coating - Teflon - was not harmless to health. A more modern alternative to teflon frying pans - frying pans with ceramic coating.



The disadvantage of Teflon is that when heated to a high temperature, it begins to release toxic substances, falling into the food that you cook on a Teflon griddle. Therefore, safer pans are ceramic pans.



Sometimes they are called just ceramic frying pans. But this does not mean that they are completely made of ceramics. Usually such frying pans are made of cast aluminum, and their coating (external and internal) is made of ceramics. There are also stamped pans, but the castings are of higher quality and durable.



The frying pan turns out to be multilayered: in the middle of aluminum, above and below - ceramics. Ceramic pans are light thanks to aluminum, and the ceramic coating neutralizes the negative properties of this metal (low resistance to mechanical damage).



Ceramic non-stick coating favorably differs from Teflon coating in several aspects. At first, ceramics are not afraid of high temperatures (the heat resistance of such a frying pan can beup to 450 degrees), quickly and evenly heated. At the same time, the handle of the frying pan does not heat up during cooking, so there is no need to use sticks.



Secondly, the surface of such frying pans is practically not porous, it is more resistant to scratches and damagethan a Teflon coating. Frying pans with ceramic coating are durable and have a long service life, and it is quite easy to take care of them. As the burnt food does not stick to the frying pan, after using it it is enough to rinse.



Ceramic frying pans - environmentally friendly, the coating is made of natural ingredients and does not contain harmful substances. In addition, the ceramic coating can be painted in any color, so that you can get not only a traditional black frying pan, but, say, red or green. Trifle - but nice.



When cooking on such frying pans, you canuse less oil than with, say, a cast iron frying pan. But do not be seduced: non-stick coating - not a guarantee that in such a frying pan never and nothing will burn. It protects not food from burning, but a frying pan from sticking to it burnt food. And do not cook at all without fat on a ceramic frying pan.



Of course, there are pans with ceramic coating and their shortcomings. Such pans are afraid of sudden temperature changes (say, if you pour a cold dough onhot frying pan). At first it can be imperceptible, but over time, microcracks can begin to form in the coating. Also, ceramic pans are extremely undesirable to wash in a dishwasher.



If you have an induction cooker or cookerpanel, ceramic frying pan you do not fit: for cooking on induction cookers you need special dishes with a metallic magnetic bottom, and for such frying pans it is, of course, ceramic. Another disadvantage of pans with ceramic coating is their high price (in comparison with the same Teflon).



Before the first use of ceramicPans should be washed in warm water with soap and dry with a soft towel. To improve the non-stick properties, it is advised to burn it lightly with vegetable oil, however, we advise read the instructions for the frying pan, before doing this.



To avoid a sharp temperature drop and the appearance of microcracks, the food should be removed from the refrigerator about 15 minutes before cooking so that they are not too cold. When cooking is better to use not metal, but wood, bamboo, silicone or nylon kitchen accessories: ceramic coating, of course, stronger than Teflon, but it's better not to risk once again.



The diameter of the burner should not exceed the diameter of the frying pan. Take care that the flame is not too strong and does not "lick" the sides of the frying pan. An empty frying pan is undesirable for a long time to keep on fire.



After using the frying pan with a ceramic coating, wash it with a soft sponge in warm water with a safe detergent. Do not use abrasive cleaners, hard sponges, acid or alkali containing products, chlorine.
