Harvesting mushrooms for winter
Basically, honey agarics are marinated for the winter, using various methods of preparation for this. For the first recipe, you will need the following products:
honey agaric honey (2 kg)
salt (2-2.5 teaspoons)
sugar (2 tablespoons)
laurel leaf (4-5 pieces)
vinegar
cloves, parsley, basil to taste.
Preparation:
First, prepare the marinade filling: pour water into the pan and add there salt, pepper, bay leaves, bell pepper, cloves and sugar.
Bring to a boil and cook for 5 minutes, then pour the vinegar, stir, once again bring to a boiling state and remove from heat.
Conjugate goosebumps, cleanse, rinse in cold water, bring to a boil in a saucepan and drain the water.
Pour again with water, boil, remove foam and cook for about 20-25 minutes. When honey agarics go to the bottom, remove the pan from the fire.
Cool the mushrooms and spread them over sterilized jars, fill with hot filling and tighten with lids.
Harvest fried snow on winter
Ingredients:
mushrooms honey agarics - 1 kg, water, salt to taste and one glass of sunflower oil.
How to cook:
Go over the hearth by selecting those where there are no wormholes. Rinse in cold water and clean. Cut large pieces into small pieces.
Boil the water in a saucepan and after boilingput into it prepared firearms. Cook for about 7-10 minutes, then take a colander, put the mushrooms on it and shake it properly so that the water can drain down.
Heat the sunflower oil in a frying pan, fold the mushrooms and cover the frying pan with a lid. Stew for about half an hour on low heat.
After 25-30 minutes, open the lid of the frying pan and fry the mushrooms until all moisture evaporates.
At the end of the frying, add salt and mix thoroughly.
In pre-prepared cans, put fried mushrooms, but put them freely, do not compact them.
Pour on top with hot oil, on which fried mushrooms. The oil must fill the mushrooms literally up to the very neck of the can. If you do not have enough oil, heat up one more portion in the frying pan.
Cover with capron cap, which should be boiled in advance.
In this form fried mushrooms can be stored in the refrigerator for up to six months.
Marinated mushrooms. Blanks
Products:
honey agarics - 2 kg,
sugar - 2 tablespoons,
acetic essence - 3 teaspoons,
salt - 4 teaspoons,
bay leaves - 2-3 pcs.,
cinnamon - 2 sticks,
3-4 buds of cloves,
5-6 peas of black pepper.
Preparation:
Make marinade: bring water to boiling water (one liter), put pepper, bay leaf, salt, sugar and cloves into it. Boil the brine for about 3-5 minutes.
Add the vinegar essence to the marinade-fill, stir well, bring to a boil and remove the pan from the stove.
Hash out the mushrooms and clean. Place them in a saucepan with cold water, boil and pour boiling water. Once again, fill with cool water, add salt and bring to a boiling state, regularly removing the foam. Cook need about 18-20 minutes. Once the mushrooms settle on the bottom, it means they have cooked.
Allow the honey mushrooms to cool to room temperature.
Fold the mushrooms in jars for two thirds of each. Top with a marinade. 6. Tighten the cans with lids and wait until it cools down. Then put in the refrigerator.
