Caviar from fresh mushrooms
Here is one of the simplest recipes of mushroom roe. To prepare caviar from fresh mushrooms with onions, we will need:
fresh mushrooms - 400 g
onions - 1 pc.
vegetable oil - 1-2 tbsp. l.
green onions - 1 beam
table vinegar, pepper, salt - to taste
Mushrooms are mine, clean and boil, and then stew inown juice, until all the liquid evaporates. Onions are cleaned, finely chopped and lightly fried in vegetable oil. Stewed mushrooms finely shredded or missed through a meat grinder, mixed with fried onions and salt to taste. Add the finely chopped green onions, peppers, vinegar, mix.
Caviar from dried mushrooms
For cooking caviar, you can use anddried mushrooms, so even in the winter on your table can appear fragrant caviar from mushrooms. Recipes of caviar from dried mushrooms are not too different from the recipes of caviar from fresh mushrooms, but there are some differences. So, for cooking caviar, take:
350 g dried mushrooms
100 ml of vegetable oil
2 onions
5-6 cloves of garlic
0.5 tbsp. l. 3% vinegar
dill, pepper, salt - to taste
Fill mushrooms with cold water and leave for 3-4hours, so that they swell. After this time, drain the water, rinse the mushrooms and, bay with clean water, boil until cooked. Let ready mushrooms cool and finely chop.
Onions are cleaned, finely chopped and lightly fried invegetable oil to a golden hue. Then put the chopped mushrooms to the onion and simmer for 10-15 minutes over low heat. Add salt and pepper to taste, add garlic through the press, mix.
Let the caviar cool and blend with a blenderor mincers. We fill it with vinegar and chopped dill. You can use for cooking caviar and fresh mushrooms, but caviar from dried mushrooms has a more intense taste and aroma.
Mushroom roe from honey
Caviar can be prepared from different mushrooms. We offer you a recipe of delicious roe from the fish. To prepare such caviar, we should take such ingredients:
fresh honey agaric mushrooms - 1,5 kg
carrots - 1 pc.
onions - 1 pc.
tomato - 1 pc.
garlic - 1 clove
cooking oil for frying
pepper, salt - to taste
We remove the mushrooms from mud and carefully wash it. Put the mushrooms in a saucepan, pour water, salt, bring to a boil and cook for 40 minutes. In the meantime, carrots are cleaned, cut and fried in preheated vegetable oil until half cooked. Add to the carrots finely chopped onions and continue to fry.
We peel the tomato from the skin and cut it, peel the garlic and chop it up finely. In turn, at a certain interval, add carrot and onions with tomato first, then garlic, pepper and salt vegetables to taste.
Mushrooms get out of the pan, let the water drain andfry the honey fungus in a separate frying pan in vegetable oil for 15 minutes. Fried mushrooms and vegetables are separately passed through a meat grinder, after which we combine both masses and mix thoroughly. Caviar is ready!
Caviar from salted mushrooms
Also in the winter you can use salted mushrooms for cooking caviar. We will get such products out of the refrigerator:
salted mushrooms (any) - 70 g
onions - 1 pc.
vegetable oil - 10 g
3% vinegar - 5 g
garlic - 1 clove
green onions, peppers, salt - to taste
Salted mushrooms are washed in running water andcrushed (finely chopped or skipped through a meat grinder). Onions are cleaned, shredded and fried in vegetable oil. Add the mushrooms to the onions and stew for 15 minutes. Garlic is passed through the press, add to the finished caviar. We fill with vinegar, salt and pepper to taste, mix. Sprinkle with spring onions before serving.
