How to marinate mushrooms for winter at home
Opeyat is one of the most favorite mushrooms. They are good in almost any form, but pickled honey agarics are generally delicious. A few recipes of marinating at home will share with the readers the Country of Soviets.
Recipe marinated for winter
For marinating in this way we will need:
1 kg of honey
1 liter of water
2 tablespoons Sahara
2 tablespoons salt
1 tbsp. 70% of acetic essence (incomplete) or 4 tablespoons. 9% vinegar
5 peas of black pepper
5 peas of sweet pepper
5 buds of a carnation
2 bay leaves
1 clove of garlic
We go through opportunies, wash and clean. For pickling, freshly frozen mushrooms can be used, in which case preliminary defrosting is not required. We pour the mushrooms into a pan with boiling water, cook for 10 minutes and drain the broth.
Fill mushrooms with a liter of boiling water, add sugar, salt, garlic cut into plates, black and fragrant pepper, cloves and bay leaves. Pour vinegar or vinegar essence.
How to boil honey mushrooms. Cook mushrooms in marinade for 10-15 minutes,then remove from the fire, transfer the hot mushrooms to the jar and pour the marinade (it should close slightly honey mushrooms). We close the jar, let it cool and clean it in the refrigerator. Marinated mushrooms can be eaten in a day.

For such marinating, we will need to take:
honey fungus - 2 kg
water - 1 liter.
sugar - 2 tbsp.
salt - 4 tsp
acetic essence - 3 tsp.
black bell pepper - 6 pcs.
cloves - 4 pcs.
bay leaves - 3 pcs.
cinnamon (in sticks) - 3 pcs.
First we prepare the marinade for sweet. Water poured into a saucepan, bring to a boil, add sugar, salt and spices. We cook for three minutes. Then add the vinegar essence to the marinade, stir, once again bring to a boil and remove the pan from the fire with the marinade.
Honey mushrooms are cleaned, thoroughly washed and thrown back oncolander to make the glass water. Fill mushrooms with cold water, bring to a boil and drain the broth. Again, pour cold water, salt to taste, bring to a boil and cook for 15-20 minutes, without forgetting to remove the noise formed with foam. If the mushrooms began to settle on the bottom of the pan - they are ready, the pan can be removed from the fire.
When the firearms cool down, we fill them with preparedbanks on two thirds of the height. We fill the mushrooms with the marinade to the very neck and close the cans with screw caps. Turn the jars upside down until completely cooled down, and then put it in the refrigerator.

salt - 50 g for marinade and 60 g for cooking

Mushrooms are sorted, cleaned and thoroughly washed. Cook mushrooms in salted boiling water (per kilogram of alcohol - 30 grams of salt) for 10-15 minutes. Cook the mushrooms in a colander and rinse with hot water.
We prepare the marinade for sweet: liter of water bring to a boil, dissolve in it sugar and salt, add dill umbrellas and pepper and boil for 5 minutes. The resulting brine is filtered, again brought to a boil and pour vinegar.
Hot marinade pour boiled honey mushrooms and cookwith a weak boil until all the mushrooms settle on the bottom of the pan. We spread pickled honey mushrooms in warm, dry jars, pour marinade and let it cool. We wrap the neck of the cans with parchment and tie it with string or twine. Keep mushrooms in a cool place.
