Eggplants like mushrooms

Eggplants are known for their ability to absorb the taste and aroma of various products, and therefore gained a huge popularity of eggplant preservation method, called "Eggplants as mushrooms".





Eggplant "like mushrooms" is easy to prepare, and in the winter it's so nice to get a fragrant jar and enjoy a delicious taste!



Eggplant "like mushrooms" option first



For the preparation of such canned aubergines you will need:



  • water - 5 l

  • salt - 1 glass

  • vinegar - 0,5 l

  • eggplant

  • garlic

  • vegetable oil


Preparation


Eggplant rinse. Cut large pieces into 4 pieces, smaller ones to 2.


Prepare the marinade. Mix the water, salt, vinegar, boil.



In boiling marinade, put eggplants in portions and boil for 5 minutes.


Boiled eggplants stack in cans layers, alternating with layers of chopped garlic.


Fill the filled jars with boiling vegetable oil. Banks rolled up.




Eggplant "like mushrooms" version of the second


For the preparation of such canned aubergines you will need:



  • eggplant - 5 kg

  • water - 5 l

  • vinegar - 400 g

  • salt - 200 g

  • garlic - 1-2 heads

  • Sunflower oil - 1 glass


Preparation



Rinsed eggplants cut into cubes. Prepare the marinade.


For the marinade mix the water, vinegar, salt, boil.


In the boiling solution, lower the eggplants and cook for 5-7 minutes.


Take the eggplant out of the solution, put it in a gauze bag (or several bags) and hang it for 12 hours.


After the due time the eggplant is removed from the bag, put into a saucepan. Mix with crushed garlic and boiled sunflower oil.


Spread the mixture on cans, sterilize for 15 minutes, then roll up the jars.
