Eggplant rolls with cheese




In order to prepare eggplant rolls with cheese, you will need:

  • eggplant - 2 pcs.

  • cheese - 400 g

  • garlic - 2 cloves

  • mayonnaise - 150 ml

  • vegetable oil


Wash eggplants and slice them thinplates along. Fry the eggplants on a preheated frying pan in vegetable oil to lightly brown. Peel the garlic, grind it (it's best to do this with the scrofula). Rub cheese on a grater, mix thoroughly with garlic and mayonnaise. Ready cheese stuffing carefully put on each toasty slice of eggplant, roll it with a roll, fastened with a toothpick, and put on a dish. Rolls of eggplant with cheese can be served on the table!



Rolls of eggplant with cottage cheese




To prepare rolls of eggplant with cottage cheese you will need:

  • eggplant - 4 pcs.

  • cottage cheese - 1 packet

  • sweet pepper - 1 pc.

  • tomatoes - 2 pcs.

  • mayonnaise - 30 ml

  • garlic, salt, greens - to taste

  • vegetable oil


Cut eggplants with plates about 5mm, salt and fry in vegetable oil until golden brown. Then prepare the curd filling: stir cottage cheese and mix it with mayonnaise. Then squeeze or grate garlic, add finely chopped greens and mix. Cut tomatoes and peppers into medium sized slices. Each plate of eggplant is spread with a filling, and on top put one piece of tomato, and one - pepper. Fold the roll and fasten it with a skewer or toothpick. Eggplant rolls with cottage cheese are ready!



Rolls of aubergines with nuts (eggplant rolls in Georgian)




For the preparation of eggplant rolls with nuts, the following ingredients are needed:

  • eggplant - 2-3 pcs.

  • walnuts - 0.5 tbsp.

  • onions - 1 pc.

  • garlic - 1-2 cloves

  • 9% vinegar - 0.25 tsp.

  • greens, salt, pepper, hops-suneli - to taste

  • vegetable oil


Wash eggplants, dry and slice longthin strips. Salt each strip and fry in vegetable oil until golden hue on each side. If the eggplants are too fat - put them on a napkin and let the fat drain. Prepare the nut sauce for the filling. Finely chop and fry onions, chop the nuts, chop the greens and crush the garlic with a special press. Mix all these ingredients, add salt, pepper, vinegar, hops-suneli and boiled water. Mix in a blender until smooth. The density of the sauce can be adjusted with water. Lubricate the eggplant with sauce and roll with rolls. Rolls of aubergines with nuts can be served on the table!



Eggplant rolls with ham




Ingredients for the preparation of eggplant rolls with ham:

  • eggplant - 2 pcs.

  • ham - 150 g

  • tomatoes - 300 g

  • onions - 1 pc.

  • carrots - 150 g

  • greens - to taste

  • vegetable oil


Cut the eggplants along into wide thinstrip, rinse, pat dry with a towel, salt and fry in vegetable oil on both sides. Prepare a vegetable filling: finely chop the onion, grate the carrot and grill in vegetable oil until golden. Tomatoes peel from the skin and seeds, beforehand having doused them with boiling water or lowering them for 30 seconds into boiling water, cut into cubes and add to onions and carrots. Fry the vegetable seven for a few more minutes, then add the greens and let cool. Cut the ham into long strips, place on the slices of eggplant stuffing from vegetables, slices of ham, then roll the rolls and chop them with a toothpick or skewer. Eggplant rolls with ham ready!
