Honey gingerbread cookies for the New Year

Historically, gingerbread were a festive dishbecause they were prepared from ingredients thatcould not be called cheap and everyday. Now gingerbread can be easily bought in a store, and cooking them will not be too expensive, but still many people still associate it with the holiday.
Gingerbread cookies
Here is one of the simplest recipes of honey cakes, from which you can make Christmas decorations. To prepare honey cakes with glaze, we will need to take such a set of products:
flour - 250 g
honey - 80 g
brown sugar - 60 g
Butter - 35 g
milk - 30 g
egg - 1 pc.
ground cinnamon - 1.5 tsp.
cocoa - 1 tsp.
ground spices (cloves, ginger, nutmeg) - 1/4 tsp. each spice
For glaze
powdered sugar - 100 g
one egg white
Mix flour with spices, add cocoa (forcolors). In a separate saucepan mix honey, butter, sugar and milk. Preheat on a small fire, stirring, until the sugar is completely dissolved. In the flour, drive in the egg, pour in the resulting honey syrup and knead the dough.
The finished dough is rolled on floured flourtable. It is best to do this while the dough is still warm. With the help of molds, we cut out the gingerbread from the dough and put it on a baking sheet covered with culinary parchment. Using a tube for cocktails, we make holes for ribbons in gingerbread. We bake gingerbread in the oven, heated to 200 degrees, for 8 minutes.
Ready-made gingerbread cookies are allowed to cool down and paint themglaze. For its preparation, whisk one protein to a dense foam, add half the sugar powder and whisk again. We pour the remaining powdered sugar and mix thoroughly. When the gingerbread completely cool down, and the glaze dries, we put it into the holes of the ribbon and hang the gingerbread on the Christmas tree.
Honey gingerbread with candied fruit
These honey gingerbread cooks are preferably cooked a couple of weeks before the holiday, so that they have time to "mature" (although if you really want to try a carrot, you can not wait). For their preparation we need the following ingredients:
flour - 625 g
honey - 600 g
sugar - 250 g
nuts - 250 g
candied fruits from lemon peel - 100 g
candied orange peel - 100 g
cherry tincture - 3 tbsp. l.
soda - 1 tsp.
ground cinnamon - 15 g
ground cloves - 7 g
ground cardamon on the tip of the knife
grated peel of one lemon
Heat the honey on low heat to the temperatureabout 60 degrees, stirring constantly. It is very important not to overheat the honey and not let it boil. In the hot honey, pour sugar and mix until the sugar dissolves.
Nuts are finely chopped, candiedly cut into small pieces. Mix the candied fruits, nuts and lemon zest, add the spices and mix everything thoroughly. We pour warm honey with sugar into the dry mixture and mix properly again. We are waiting for the mass to cool slightly.
Dissolve the soda in the cherry tincture and add to the mixture of honey, nuts, candied fruits and spices. There we pour the sifted flour and mix the dough properly. Cover the dough and leave for the night.
The next morning, roll the dough into a 1-1.5 cm thick layer on a flour-poured table and cut out the gingerbread with molds. For several hours, we remove the future gingerbread in the refrigerator.
Preheat oven to 180 degrees and bakegingerbread cookies 12-15 minutes. When honey gingerbread cookies completely cool, you can cover them with icing - sugar or chocolate. Ready-made gingerbread should be given "ripen" for a couple of weeks - so they will become softer and will acquire a more intense taste.
