Recipe for classic jam from raspberries for the winter


We have made raspberries and other berries to make jam, but let's try to prepare a wonderful raspberry jam this summer: it's fast, easy, and most importantly delicious!


1. For raspberry jam, we need berries and sugar in the ratio 1 to 1, that is, for a kilogram of raspberries we take a kilogram of sugar. Berries are cleaned and washed, and put sugar in a 120-degree oven heated for 15 minutes - warm sugar will dissolve better.


2. Banks and lids boil in a pot of water for 10 minutes.


3. We put the raspberries on a small fire in a suitable size bowl of stainless steel or in dishes covered with enamel. We fall asleep with sugar.


4. With a hard whisk, we put sugar in the berries until a homogeneous mass is obtained.


5. Slightly increase the fire under the raspberries (if you have a culinary thermometer, focus on 30 degrees) and constantly stir the jam.


6. Gradually increase the fire and bring the mixture to a boil until a smooth pink foam appears on the surface. Do not let jam overflow.


7. When the jam is sufficiently boiled, and the foam has risen to the surface, we remove the dishes from the fire and carefully pour jam into the prepared jars. Penka can be removed and thrown out, and you can leave.


8. Do not fill the can to the top - leave it empty about two fingers on top. Wipe the edges of the neck and tightly tighten the lid.


9. Put jars in a pot of warm water, the water should cover the cans for a couple of centimeters. Slowly bring the water to a boil and boil for 10 minutes.


10. We take out the raspberry jam and put it in a dry place without drafts. After a day, we wash the jars and put them in a dark place for the winter.


What to cook with raspberries for the winter


Recipe for homemade raspberry compote


In order to enjoy a rich raspberry drink in winter, we will prepare compote according to the following simple recipe:


1. In a sterilized liter jar we cover 700 grams of washed raspberries, sprinkling each layer with sugar (about 300 g), pour half a glass of cold water on top.


2. Put the jar in a high saucepan, the water should not reach the neck of the can for a couple of centimeters.


3. Bring the water to a boil, pasteurize for three minutes. Remove from the fire, close the raspberry compote.


4. Turn the bank and clean for a day in a place without drafts.


5. The next day, compote of raspberries put with a dark wardrobe for storage.


Harvesting raspberries for the winter - drying and freezing


To use raspberry berries in baking and other home desserts, berries can be stored in dried or frozen form. 1. We rinse, rinse and soak the raspberries with a dry towel.


For drying:


2. We spread the berries at a distance from each other on a baking sheet, laid with baking paper.


3. Put the baking tray in the oven for 50-75 degrees (the smallest mode), leave the door ajar for better air circulation.


4. We check every hour the state of drying, after about 5-6 hours, raspberry can be obtained and poured into a sealed jar. We put the can in a dark dry place.


For freezing:


1. We spread the berries on a tray, laid with baking paper.


2. We put it in the freezer for the night. The berries should be completely frozen by morning.


3. In the morning we pour the berries into a sealed bag or container and put them in the freezer for the winter.
