We bring to your attention the recipe of the French dessert "Mousse aux framboises" - "Raspberry mousse".
Mousse aux framboises
To prepare 6-8 servings of mousse you will need: </ p.
- 1 tbsp. spoon gelatin
- 0.5 glasses of cold water
- 4 glasses of fresh raspberries (or frozen)
- 1 cup of sugar
- 2 egg whites
- 1.5 cups of 30% cream
Preparation
Soak gelatin in water. Squeeze out of raspberry 0,5-0,75 glasses of juice. In the juice add water, put the sugar and cook on low heat to make a syrup. Put all the raspberries in the syrup and cook for another 10 minutes. Add gelatin and stir until gelatin dissolves. Wipe all through a sieve. Refrigerate.
Whisk egg whites until foam is formed (but not dry) and pour them into the mashed raspberries.
Slightly whip the cream on ice, mix them with raspberries and whisk again.
Pour mousse into molds and refrigerate for several hours.
