Scallop salad with spinach



Treat yourself to a dish of Mediterranean cuisine by preparing a scallop salad that is served on a spinach pillow. To make a salad, you will need such products:



  • 2 tbsp. l. olive oil

  • 4 large shallots onions

  • 1 bunch of green onions

  • 1/2 tbsp. pine nuts

  • 1/2 tbsp. dried tomatoes, preserved in oil

  • 1 tbsp. l. chopped garlic

  • 1/2 tsp. salt

  • 1/2 tsp. freshly ground pepper

  • 16 large sea scallops

  • 2 tbsp. l. freshly squeezed lemon juice

  • 350 grams of spinach leaves

  • balsamic vinegar


Preheat the frying pan and on olive oilfry for 15 minutes chopped shallots, green onions, dried tomatoes and pine nuts. When the nuts become golden brown, remove the frying pan from the fire and add to the sauce 1/4 tablespoons of salt and pepper.



Pour the scallops with lemon juice. Preheat the grill and fry the scallops on it for 5 minutes on each side. If you do not have a grill, you can use a frying pan, but in this case, the frying time should be shortened so that your scallops do not become "rubber". In the end, season with salt and pepper scallops.



When everything is ready, you can prepare a salad. In a large bowl, stir the spinach leaves with a small amount of balsamic vinegar. Leaves of lettuce lay in a salad bowl, from above put scallops and pour them with nut sauce.



Salad with scallops and cheese



We offer to prepare you another salad of scallops. This time you will need such ingredients:



  • 350 gr of sea scallops

  • 1 clove of garlic

  • 300 g of lettuce

  • 250 grams of romaine lettuce

  • 100 g celery

  • 120 g of mozzarella

  • 12 pcs. cherry tomatoes

  • "Thousand Island" sauce


Sea scallops should be cooked in a saucepan with water for 3-5 minutes. Drain and chill scallops. While the scallops are cooling, prepare vegetables.



Cut the clove of garlic into two halves. Fresh slice of garlic, cut the salad bowl, in which you will serve a salad. Garlic is removed, so that it is not in the salad. Next in this salad bowl, combine the leaves of salads and celery. Cut the mozzarella into thin slices, cut the cherry into halves. Mix the salad, decorate it with scallops. Top with a salad dressing "Thousand Islands".
