Marinated cabbageEveryone is well acquainted with sauerkraut. Do you know that this is not the only way to prepare cabbage for future use? Marinated cabbage, for example, can be no less delicious than sour. The country of the Soviets will tell you about the preparation of pickled cabbage.







Marinated cabbage with spices



This, perhaps, is one of the simplest recipes of pickled cabbage. Nothing superfluous - just cabbage, spices and marinade.



To pickle cabbage on this recipe, we will need:




  • cabbage - 1 kg


  • salt to taste



For marinade:




  • water 600 ml


  • 6% vinegar - 200 ml



Spices for a liter jar:




  • black pepper - 3-4 peas


  • cinnamon - 1 slice


  • cloves - 1 bud



Cabbage is cleared from the upper leaves and shredded asfor souring. Salt the cabbage to taste and leave for two hours. Then put on the bottom of each can of spices (black pepper, cinnamon, cloves), tightly fill the cans with chopped cabbage and fill the jars with boiling marinade from water and vinegar. Sterilize for 20 minutes and sealed.

Marinated cabbage with apples



This may seem strange, but apples are often added to the can when preserving vegetables: they give the vegetables a special flavor.



To close the pickled cabbage for the winter with apples, we'll take:




  • cabbage - 1 kg


  • apples (antonovka) - 100 g


  • sugar - 50-100 g


  • salt - 25 g


  • seeds of dill or cumin - 5 g



For marinade:




  • water - 1 l


  • 9% vinegar - 300-400 ml



Spices for a liter jar:




  • black pepper - 5-8 peas


  • sweet pepper - 5-8 peas



Cooking cabbage: remove the wilted leaves, mine. Shinkle cabbage for sour cream. We clean the apples from the skin, remove the core and cut into cubes or straws. Mix cabbage with apples, add sugar, seasonings and salt. We leave for 2-3 hours.



We prepare marinade from water and vinegar. We fill them with banks by one fourth. We put cabbage with apples in the jars, tinting them lightly. Do not empty the marinade! Pasteurize the jars at a temperature of 90 ° C (20 minutes for half-liter cans, 25 for liter and two-liter cans) and roll.



In addition to apples, you can add carrots to cabbage.



Marinated cabbage with bell peppers



If you cook pickled cabbage with sweet pepper, you will get an excellent salad.



To prepare marinated cabbage with Bulgarian pepper we will need:




  • cabbage - 1 kg


  • sweet pepper - 1 kg


  • onion - 100-200 g


  • salt - 40-60 g



For marinade:




  • water - 1 l


  • 9% vinegar - 450 ml


  • sugar - 200-300 g



Spices for a liter jar:




  • seeds of cumin or dill - 3-4 g



For this recipe, the best is a green sweet pepper with fleshy fruits. Mine pepper, cleanse from seeds and blanch in boiling water for 4-5 minutes. Immediately cool in cold water.



Cut the peppers into small pieces. Cabbage is cleaned, washed and shredded for souring. Onions are cleaned and cut into small cubes. Mix all the vegetables, add salt.



We prepare marinade from water, vinegar and sugar. Bring to a boil and fill the hot marinade in the cans, filling them in a quarter. Fill the cans with vegetables. Marinade should cover the vegetables from above. Pasteurized at 90 ° C (20 minutes for half-liter cans, 25 - for liter and 2 liter) and roll.
