Shrimp under the fur coat
For preparation of jellied shrimp, take these products:
- 0.5 kg of shrimp
- 0.5 kg of hot-smoked salmon fillet
- 250 g of mayonnaise
- 2 onions
- 2 tbsp. l. gelatin
- 2 tsp. lemon juice
- 1 broth cake of vegetable broth
Soak gelatin in cold water - its grains should become transparent. Throw the gelatin on a sieve to make the glass water, and then heat it in a water bath until it completely dissolves.
Peel and finely chop the onions. Chop the pink salmon fillets and mix it with chopped onion and mayonnaise. Dissolve the broth cube in boiling water and boil in boiling vegetable broth of shrimp for two minutes. Throw the boiled shrimps in a colander, let the water drain, cool and peel the shrimp.
Strain one glass of broth in which cookedshrimp, and add lemon juice to it. Put half the gelatin into the warm broth and heat it, stirring constantly, until the gelatin is completely dissolved. Cool the gelatin solution. The second half of the gelatin is added to the mixture of pink salmon, onion and mayonnaise.
Spread the fish mass in eight portionsmolds and level. On top, spread the shrimp and pour into the cooled jelly. Put the dish to cool in the refrigerator for two hours. Before serving, dip the salad molds into hot water for a couple of seconds and tilt the contents onto the plates.
