Maybe we owe this childhood memories when at each stop there was a familiar yellow barrel, or the reason for that is the historical roots. Whatever it was, with the onset of heat, almost everyone at least once a season will try this wonderful drink. What is remarkable about kvass? Is it good for everyone to drink it? How not to be mistaken in the huge assortment presented in stores? Let's try to understand the intricacies of choosing and using this drink.
Benefit or harm?
Kvass fans talk about high contentvitamins, invigorating action and beneficial effects on digestion. Opponents note the high content of acids, a sufficient percentage of alcohol and the fact that modern kvass is not the life-giving drink that our ancestors prepared.
Both those and others are right in their own way. Of course, most of the recipes for traditional kvass are now lost, but in the 21st century this drink has useful properties.
Use of kvass:
It quenches thirst well and saves from dehydration. Kvass contains a sufficient amount of minerals. Its use allows you to quickly fill their loss with sweat in the heat. In addition, unlike synthetic soda, it does not contain much sugar, so it does not provoke thirst, but quenches it.
Contains vitamins and amino acids. There is a huge number of varieties of the drink, and the composition of biologically active substances in them varies greatly. However, common for all varieties is the high content of vitamins of group B and E.
Due to the content of lactic acid, kvas normalizes the gastrointestinal microflora, like sour-milk products.
Carbon dioxide promotes digestion and absorption of food in the stomach.
Of course, all of the above applies only to kvas of natural fermentation.
There are cases when kvass should be used with caution:

Pregnancy, breastfeeding, children under 3 years.

Many manufacturers, speeding up and cheaperproduction, use various additives that deprive the kvass of what we love so much: taste and good. In order to find out what exactly we are buying: real kvass or a pop, it is enough to study the list of ingredients on the package.
What should not be in kvass
Flavors. This kvass itself has a rich bread flavor and taste, and there is no need to further flavor it. And to make a drink that tastes like kvass, it's enough to add sugar, citric acid and a flavor additive to the carbonated water.
Acidity regulators (citric acid). This ingredient is added in order to save time, as natural fermentation takes several days. Kvass is not allowed to be naturally nourished, and the necessary sourness in taste is provided with the help of additives.
Sweeteners. Natural fermentation of kvass provides yeast, which only work in the presence of natural sugar. With the help of artificial sweeteners, the manufacturer masks the process violation.
Preservatives. Modern production technologies are such that kvass in the manufacturing process not only does not contact the environment, but undergoes filtration and pasteurization. In such conditions, preservatives are not necessary even for long-term storage. If the manufacturer is confident in compliance with the sanitary standards in the enterprise, he will not have to spend on preservatives.
Ethanol in an amount of more than 1.2%. It is this limit of alcohol content that establishes GOST.
Artificially added carbon dioxide. With natural fermentation yeast and so produce a sufficient amount of carbon dioxide.
The best kvass consists of just a few ingredients: high quality purified water, leavened wort, sugar, yeast and lactic acid bacteria.
