11 Olive-cherry sandwiches
To prepare 32 pieces you will need:
- 32 slices of baguette from wholemeal flour;
- 6 tablespoons of olive oil;
- Salt and ground black pepper;
- 230 grams of olives stuffed with pimento (cheese sauce, mayonnaise and sweet pepper sauce);
- 115 grams of pickled olives, finely chopped;
- 115 grams of chopped dried cherries;
- 50-60 grams of pimento pepper, peeled and chopped;
- 1 large shallot, cut into 4 pieces, and then into thin slices;
- 1 tablespoon chopped fresh basil;
- 1 teaspoon finely grated lime peel;
- 2 teaspoons of lime juice;
- 180 grams of goat cheese;
- 60 grams of very thinly sliced smoked ham (32 slices);
- 2 tablespoons chopped chives.
Preparation:
Preheat the oven to 220 ° C. Put pieces of baguette on a very large sheet for baking. Spread bread with 4 tablespoons of oil, lightly salt and pepper. Fry the bread on the middle grill for about 5 minutes until it turns crispy. Remove the sheet from the oven, put it aside.
To create olive-cherry paste in a cupmedium size, mix 2 tablespoons of olive oil, olives, cherries, peppers, onions, lime zest and lime juice. Spread the toast with goat's cheese, put a slice of ham and olive-cherry paste on top, sprinkle with onion.
