3 Mini tartlets with cheese, onions and tomatoes

To prepare 12 servings (24 pieces) you will need:



  • Universal spray for baking;

  • 450 grams of flour;

  • 2 tablespoons grated Parmesan cheese;

  • ½ teaspoon of salt;

  • 70-80 ml of olive oil or canola oil;

  • 5-7 tablespoons of cold water;

  • 1 egg; 70-80 ml of milk;

  • Ground black pepper to taste;

  • 70-80 grams of Gruyère cheese or Monterey Jack cheese;

  • 1 tablespoon of chopped onions;

  • 5-6 pears or cherry tomatoes, cut into thin slices and / or fresh spicy herbs;

  • Leaves thyme to taste.


Preparation:


1. Preheat the oven to 220 ° C. Spray the baking spray onto 24 muffin molds, set aside. To prepare tartlets in a large saucepan, mix the flour, Parmesan cheese and salt. Add the oil, stir until smooth. Add two tablespoons of cold water, stir until homogeneous. One by one add the remaining water until the flour is moistened. Roll the ball, gently knead the dough until smooth.


2. Divide the dough into 24 servings, squeeze each serving into a muffin shape, make sure that there are no dough tears. Bake for 8-10 minutes until the dough starts to brown. Remove from the oven and set aside. Lower the temperature in the oven to 175 ° C.


3. To fill the tartlets in a small cup, beat the eggs, milk and pepper. Add the onion and cheese Gruyer. Fill each tartlet with about 1 teaspoon of this mixture. Top with a slice of tomato or leaves of herbs.


4. Bake for 20 minutes or until the filling is swollen. Let cool for 5 minutes. If desired, sprinkle with leaves of thyme.
