2 Profitroles with cheese with mold and pine nuts

To prepare 25 servings (100 pieces) you will need:



  • 230 ml of water;

  • 100-120 grams of butter;

  • 1 teaspoon of chopped thyme (thyme);

  • ½ teaspoon of coarse salt;

  • Black ground pepper on the tip of the spoon;

  • 230 grams of flour; 4 eggs;

  • 500 grams of crumbled Roquefort cheese or other molded cheese;

  • 230 grams of crushed gruyere cheese;

  • 50-60 grams of toasted pine nuts.


To fry the pine nuts in a medium-sized frying pan over medium heat, roast the nuts for about 3 minutes, constantly stirring with a spoon. Place on a paper towel and cool.


Preparation:


1. Preheat the oven to 210 ° C. In a medium-sized saucepan, combine water, oil, thyme, salt and pepper. Heat to a boil. Immediately pour all the flour, mix thoroughly. Stir until the mixture takes on the shape of a bowl. Remove from heat, cool for 10 minutes. For one wooden spoon, drive in the eggs, mixing the dough carefully each time. Add Roquefort cheese, Gruyère cheese and pine nuts to the dough.


2. Cover the two sheets for baking parchment. Transfer the dough into the pastry bag. Using a nozzle with a diameter of 2.5 cm, place the dough on the baking sheets.


3. Bake for 20 minutes until the dough is browned and hardens. If necessary, after 10 minutes after the start of the baking, change the baking sheets in places for better browning. Serve hot or at room temperature.


To the mistress of the note: Cook exactly according to the recipe, excluding the cooling of the dough. Keep in a vacuum container frozen for up to 1 month. To serve on the table, preheat the oven to 190 ° C, place the profiteroles in the oven for 5 minutes or until heated.
