Salad Recipe with Fried Eggplant



To prepare a salad with fried eggplant we need the following ingredients:





  • 2 large or 3 medium eggplant;

  • 2 eggs;

  • 1 large or 2 small tomatoes;

  • a bunch of coriander or other greens;

  • 3 cloves garlic (they need to be crushed);

  • 1 small potato;

  • sunflower or olive oil for roasting;

  • salt and black pepper to taste.

  • Before preparing the salad, wash vegetables and dry them by spreading on a towel. Eggplants and tomatoes should not be overripe so that they do not "creep" in the cooking process.

  • Lightly beat the eggs in a bowl and season them with salt. Cut the eggplants into thin slices and dip them into the egg mixture for a couple of minutes. Preheat the frying pan over medium heat. On the already heated frying pan pour a little (about 2 tablespoons) of frying oil.

  • Fry your eggplants in oil on both sides -they should become golden brown (you will take about one minute to roast one side of the eggplant). Make sure that the vegetables are well fried - they are not needed in a salad. Already put the eggplant in a bowl.

  • Now get down to the potatoes. Also cut it into thin slices, as for making French fries. Best of all, if you get to fry potatoes to a crunch.
