Ingredients for Warm Salad
4 small carrots, cut along
3 pieces of shallot onion, cut in half
1 peeled pumpkin without seeds, diced 1 centimeter
250 grams of Brussels sprouts cut in half
4 raw garlic cloves
6 tablespoons olive oil
salt and pepper to taste
½ cup washed with dry black lentils
½ bulb
1 bay leaves
3 tablespoons apple cider vinegar
1 tablespoon Dijon mustard or 1 teaspoon of plain mustard
200 grams of arugula
2 stalks of celery, thinly sliced

Preheat the oven to 200 degrees. Prepare vegetables, wash, cut. In a large bowl, mix: carrots, scallions, pumpkin, Brussels sprouts, raw garlic, celery. Salt and pepper. Mix. Put the vegetables in a frying pan with a flat bottom, cook until ready until the carrot is soft.
Prepare lentils: pour water to cover it by 4 centimeters. Add the onions and bay leaf. Bring to a boil, cook for another 20 minutes, or until the lentils become soft. Drain the water, pull out the onions and bay leaf. Salt and pepper. When the vegetables in the frying pan are ready, pick cloves of garlic, peel and mash.
Mix 4 tablespoons of olive oil withapple cider vinegar and mustard. Add the ground garlic. Put the refueling in lentils. Add to the lentils refueling. Connect the lentils with vegetables, pour the lemon juice, mix. Sprinkle with lemon zest and grated parmesan cheese. Serve warm on the table.
