Lamb with eggplant



To cook a stewed lamb, you will need:



  • lamb - 400 g

  • tomatoes - 3 pcs

  • eggplant - 2 pieces

  • red bell pepper - 1 pc

  • onions - 1 pc

  • olive oil, garlic, coriander, - to taste

  • Spices: turmeric, paprika, cayenne pepper - to taste



Tomatoes peel, onions and garlic finelychop. Bulgarian pepper lightly fry on the grill - so it will be easier to clean. After peeling the pepper from the skin and seeds, cut it with strips. Coriander chop, and eggplant cut into large cubes.



Lamb cut into cubes and fry inolive oil with cayenne pepper, paprika and turmeric. Add the onions and garlic in the pan, pour a glass of water and bring to a boil. When the water boils, put the meat into serving bowls and simmer on a low heat for 45 minutes.



After this time, add to the meathalf a coriander, vegetables, a glass of water and a teaspoon of oil. Stew for half an hour (vegetables should become soft). Sprinkle the finished dish with coriander. It must be eaten while it is hot.
