Green tomatoes for the winter
Eat green tomatoes for food in fresh formit is impossible, because they contain the poisonous substance of solanine. However, when canning is destroyed, so many housewives successfully close the green tomatoes for the winter. The country of the Soviets shares recipes for canning green tomatoes.
Stuffed Green Tomatoes
One of the most popular ways to procuregreen tomatoes for the winter - marinate them. To pickled green tomatoes were more spicy, you can stuff them with greens and garlic. To prepare stuffed green tomatoes, we take:
green medium-sized tomatoes - approx. 1.8 kg
garlic - 1-2 heads
sweet pepper - 1 pc.
onions - 1/2 pcs.
table vinegar - 80 ml
salt - 2 tbsp. l.
sugar - 1,5 tbsp. l.
dill umbrellas - 2 pcs.
greens of dill - 1 large bunch
parsley greens - 1 large bunch
crushed horseradish root - 1 tbsp. l.
bay leaves - 1 pc.
hot pepper - a small slice
Black and fragrant pepper peas - to taste
horseradish leaves - to taste
Tomatoes are mine and we cut across, not cutting toend. Garlic is cleaned and cut into thin plates. I wash my greens and drain them. Each tomato is gently stuffed with garlic plates (2 pcs.) And greens of parsley and dill (1 branch). Bulgarian pepper is purified from seeds, mine and cut into strips.
We take a sterile three-liter jar. At the bottom lay onions, cloves of garlic, dill umbrella, bitter pepper, half of the leaves and horseradish root, black and sweet pepper, bay leaf. Tightly put tomatoes in the jar, spread the sweet peppers on each side. From above put an umbrella of dill, the remains of a root and leaves of horse-radish.

Fill the tomatoes with boiling water, cover the jarpolyethylene lid and leave for ten minutes. Then drain the water, again bring to a boil and again pour the tomatoes for ten minutes. Drain the water a second time, add salt and sugar, let's boil and boil for five minutes. In a jar of tomatoes, pour in the vinegar, pour the brine to the top, roll up the sterile lid and wrap the jar for a day, turning the neck down.
Caviar from green tomatoes
You can try to close the caviar of green tomatoes. It's quite easy to cook it. Products we need are:
green or brown tomatoes - 3 kg
carrots - 2 kg
onions - 500 g
vegetable oil - 250 ml
sugar - 150 g
table vinegar - 2 tablespoons. l.
black pepper - to taste
All my vegetables, carrots and onions are cleaned. We cut vegetables with such pieces that it would be convenient to pass them through a meat grinder. Scrolling tomatoes, carrots and onions through a meat grinder, shift the resulting mass into an enameled container. Add salt and sugar, simmer on medium heat for about an hour and a half after boiling, stirring constantly. At the end of the cooking, add oil, vinegar and pepper, stir. We spread the hot eggs on sterile jars and roll them up.
Salad from green tomatoes
You can close the green tomatoes for the winter in the form of a salad. Components in it a little: actually tomatoes, onions and spices. Here is the exact list of ingredients for salad:
1-1.5 kg of green tomatoes
500 ml of white wine vinegar
500 ml of sunflower oil
1 onion
garlic, ground oregano, large sea salt - to taste
Tomatoes are carefully washed and cut into plates. Fold in a bowl, salt and leave for a couple of hours to make the tomatoes juice. Then we throw it back to the colander and let the juice drain.
We clean the onion and garlic, cut the onions into half rings,garlic - plates. Stir in onions, garlic and tomatoes, pour vinegar and leave to marinate for a day. Then throw the vegetables in a colander and rinse with running water.
Then lay the salad layers in sterile jars, pouring each layer of ground oregano. Fill the salad with oil and close the cans with screw caps.
