Salad of tomatoes and zucchini



Quite popular blanks for the winter are salads from tomatoes. We will share with you one of the many recipes for canned salad from tomatoes.



Salad of tomatoes and zucchini


For its preparation we will need:




  • tomatoes - 1,5 kg


  • zucchini - 1 kg


  • onions - 500 g


  • garlic - 300 g


  • vegetable oil - 75 ml


  • sugar - 50 g


  • salt - 40 g




Zucchini, tomatoes, onions and garlic,we clean and cut. Pour into the pan vegetable oil, put the sliced ​​zucchini, add salt and sugar, cook for 10 minutes. Then add tomato saucepan, after another 10 minutes - garlic, and 10 minutes after garlic - onion. When all the vegetables boil, cook for another 10 minutes. We spread the salad in pre-sterilized jars and roll them up.



You can prepare this salad in another way: cut and mix all the vegetables and cook in vegetable oil for 20 minutes after boiling, and then spread out on cans and roll.







Cucumber salad



Not less popular than salads with tomatoes, and use other blanks for the winter - salads from cucumbers. We offer you a recipe for making one of these salads.



Cucumber salad


To close the salad of cucumbers, we take:




  • cucumber - 2 kg


  • onion - 2 kg


  • sunflower oil - 100 ml


  • table vinegar - 100 ml


  • sugar - 75 g


  • salt - 60 g


  • black pepper peas - 5-10 pcs.




Cucumbers and cut into small cubes. We clean onions and cut into half rings. Add the salt and sugar to the vegetables and leave for 15 minutes, so that cucumbers and onions let the juice.



Then put the vegetables on the fire and bring to a boil,stirring constantly. After 10 minutes of cooking, pour in the vegetable oil and vinegar. Ready lettuce is laid out hot in pre-sterilized tanks and rolled up.







Salad from sweet pepper



Do not overlook and harvest for the winter of sweet pepper.

Ingredients for the salad from the Bulgarian pepper:




  • green tomatoes - 4 kg


  • sweet pepper - 3,5 kg


  • onion - 2.5 kg


  • green celery or parsley - 300 g


  • salt - 150 g


  • sugar - 150 g


  • table vinegar - 100 ml


  • Ground black pepper - 30 g




Pepper and blanch for 1-2 minutes in boiling water. Then we cool the pepper in cold water, cut out the peduncle, cleanse the seeds and cut into strips about half a centimeter wide.



My tomatoes and cut into rings with a thickness of 3-4 mm. My greens and finely chopped. Mix the peppers, tomatoes and greens in a bowl, fill with vinegar, add salt, sugar and ground black pepper.



Tightly put the salad in a liter jar and sterilize in boiling water for 20 minutes.
