Freshly salted tomatoes
Lightly salted cucumbers are a very popular summer snack. Freshly salted tomatoes are inferior to them in popularity, but why not try to cook them at least for a change? The country of the Soviets offers recipes for salted tomatoes.
To prepare this snack, you should take dense tomatoes of small size (well suited, for example, tomatoes, "cream"). Pickling tomatoes takes more time than pickling cucumbers: tomatoes have to be poured with cold brine, since they burst from hot. To reduce the time of pickling, tomatoes can be cut into halves.
Freshly salted tomatoes
Here is one of the simplest recipes for lightly salted tomatoes, without any special frills. To make a snack from tomatoes on this recipe, we'll take:
1.5 kg of fresh tomatoes
1.5 liters of water
100 g of dill
3 tbsp. l. (with top) salt
1 tbsp. l. Sahara
1 onion
1/2 head of garlic
bay leaf, sweet pepper - to taste
The water is slightly warmed up in order to dissolve salt and sugar in it. Dissolve sugar and salt in warm water. Wash the tomatoes in one layer in a suitable container.
Onions are cleaned, cut into circles. Garlic is divided into lobules, clean. On tomatoes we spread half of onion, garlic, sweet pepper and bay leaves. On top put half of the previously washed dill.
Next we put another layer of tomatoes, spices and dill. Fill all brine, cover with a lid and leave it for three days at room temperature. For storage, we put it away in the refrigerator.
Freshly salted tomatoes with greens
Dill and parsley is no surprise, try to add to the lightly salted tomatoes some more original greens - basil, coriander, in general, everything that comes to mind. To prepare lightly salted tomatoes, stuffed with herbs, take:
tomatoes - 2 kg
water - 1 l
sugar - 70 g
salt - 70 g
garlic - 5-6 heads
Bulgarian pepper - 2-3 pcs.
dill, parsley, coriander, basil - half the beam
citric acid - 1 tsp.
My greens and finely cut with a knife. Garlic and peppers are cleaned, crushed with a food processor or meat grinder. My tomatoes, cut off the tips and cut in the middle, not cutting to the end.
In the incision we put a teaspoon of a mixture of different kinds of greens, garlic and pepper, close the tomato and put it on the bottom of a pot or other container. So stuff and put all the tomatoes in the pan.
To prepare the brine, water with salt and sugar bring to a boil, add citric acid. When the brine is slightly cool, pour the tomatoes so that they are completely covered with brine.
For tomatoes put the plate as oppression, cover the pan with a lid and leave for two days.
Lightly salted tomatoes with spices
But the recipe for lightly salted tomatoes with the addition ofspices. Currant leaves and mustard seeds not only add a piquant taste to tomatoes, but they will not allow them to deteriorate. Also, from the spoiling of tomatoes, vinegar will be protected. So, we will prepare such ingredients:
water - 1,5 l
average tomatoes - 1 kg
salt - 4 tbsp. l.
sugar - 1/2 tbsp. l.
vinegar - 1.5 tsp.
garlic - 6-8 denticles
black pepper in peas - 6 pcs.
dill - 5 branches
cherry leaves - 4 pcs.
bay leaves - 3 pcs.
currant leaves - 2 pcs.
cloves - 2 pcs.
parsley root - 1 pc.
Mustard seeds - 1/3 tsp.
paprika - 1/3 tsp.
The greens and root of my parsley. At the bottom of the enamel pot or any other container suitable for the preparation of lightly salted tomatoes we lay all the greens and chopped parsley root.
Garlic is divided into denticles, we clean them andcut into halves. Each tomato is cut slightly from the side and put into it half a clove of garlic. Garlic-stuffed tomatoes are placed in a saucepan, pouring sugar, salt and spices.
We bring the water to a boil, let it stand for a couple of minutes and pour tomatoes on it. Add the vinegar to the tomatoes and cover with a lid. Let the saucepan cool completely and put it in the refrigerator for 10-12 hours.
