Risotto with shrimps

Risotto with shrimps: recipe
To prepare this dish you will need the following ingredients:
- 250 grams of arborio rice or carnaroli
- 5 tbsp. l. olive oil
- 1 small onion
- 500 ml fish broth (can be replaced with chicken)
- 125 ml of dry white wine
- 350 grams of large shrimp
- 1 clove of garlic
- 1 tbsp. l. lemon juice
- 1 tbsp. l. chopped green parsley
- salt
- pepper
Preparation of risotto should start with rice, andWhile he is preparing, you can do shrimp. In a large frying pan, heat up the olive oil. Peel the onion and cut it into small cubes. Fry the onion in oil for 5 minutes until it turns into a beautiful golden color. To the fried onions, add the raw rice and stir it well in a frying pan to completely cover with oil.
In a frying pan with rice, add 250 ml of broth. From time to time, stir the rice until it completely absorbs the broth into itself. Then you can add the rest of the broth and wine. The rice should completely absorb the liquid. Try the rice for the taste, it should be soft, but the inside will remain a bit stiff. If you think that the rice is not yet ready, you can add a little water (not more than 60 ml at a time) to bring the rice to the ready. Add salt and pepper to taste. Finished rice aside and shrimp.
While rice is prepared, clean the shrimp: remove not only the shell, but the veins on the back and abdomen. Rinse the peeled prawns and let them drain in a colander.
Chop garlic and parsley into smallpieces. Squeeze out the juice from the lemon. Heat a small amount of olive oil in a frying pan and add the garlic. Fry it for 2-3 minutes on low heat. Then increase the heat and add the shrimp. Salt and pepper them a little. Fry the shrimps on one side for 2-3 minutes until they turn pink. Then turn the shrimps over to the other side and fry them again for 2 minutes. Sprinkle the finished shrimp with lemon juice and sprinkle with parsley. Serve the ready risotto immediately after preparation.
