Recipe 1: Simple



Let's start, perhaps, with this recipe of marinated tomatoes in its own juice - it is one of the simplest. Products we need the following:




  • ripe tomatoes of small-fruited varieties - 3 kg


  • large ripe tomatoes - 2 kg


  • salt - 80 g


  • sugar - 50 g

You can first remove the skin from tomatoes, for this you need 1-2 minutes to blanch them in boiling water, then cool it in the cold, and the skin will be easily removed. Large tomatoes cut, heated in a lid covered with an enamel saucepan, but until the boil is not brought.



Hot tomato mass is wiped through a sieve, inresulting in juice dissolve salt and sugar, pour them tomatoes. The level of juice should be about 2 cm below the edges of the neck, tomatoes should be completely covered with juice. Covering the tomatoes with lids, we sterilize the jars in boiling water (about 10 min for litters), roll.



Recipe 2: with herbs and Tabasco sauce



Tomatoes in their own juice for the winter with tomato juiceIf you like more spicy blanks for the winter, this recipe is for you. To prepare tomatoes for the winter according to this recipe, we need the following ingredients:




  • 1 kg of tomatoes - "cream"


  • 6 peas of black pepper


  • 5 sprigs of parsley


  • 5 sprigs of dill


  • 2-3 drops of Tabasco sauce


  • 1 stalk of celery


  • 1 tbsp. l. Sahara


  • 1 tbsp. l. salt



Tomatoes are blanched in boiling water forminutes, then we throw it back to the colander. When the tomatoes cool down, we remove the peel from them. 700 g of peeled tomatoes are rinsed with cold water and placed in a pre-sterilized jar.



The remaining tomatoes are cut into halves,we remove seeds and very finely chop the flesh. Fold it in a saucepan and bring to a boil, stirring constantly. Wash and shredded greens are added to the pan along with pepper, Tabasco sauce, sugar and salt. Cook for 10 minutes over low heat.



Sauce wipe through a sieve, return to the panand again bring to a boil. Fill tomatoes with hot juice and cover with a lid, sterilize for 10 minutes. We roll the jar, let it cool down and put the tomatoes in our own juice for storage in a cool place.



Recipe 3: blanks with vinegar and spices



If you are afraid for the safety of your workpieces, you can add a little vinegar to the tomatoes. So, we suggest preparing tomatoes in your own juice with vinegar and spices, for this you will need to take:




  • small tomatoes


  • 3 l of tomato juice


  • 200 g of sugar


  • 50 g of salt


  • 5 buds of a carnation


  • 5 peas of black pepper


  • 2.5 tsp. chopped garlic


  • 1 tsp. 70% vinegar


  • 1/4 tsp. ground cinnamon



Tomatoes in own juice at homeWash and dry tomatoes, do 3-4puncture with a toothpick around the stalk. Tightly lay the tomatoes in dry, sterilized jars. Tomato juice (preferably freshly prepared) bring to a boil, sprinkle sugar, salt and spices (clove and pepper pre-fold into a piece of gauze and tie).



Boil the juice for half an hour on a slow fire, not forgettingstir. At the end of cooking, remove and discard the spices tied in gauze. Add the juice of garlic, previously passed through the press, and vinegar. Bring to a boil and remove from heat.



Pour the tomatoes with hot juice and cover the jarssterilized lids. Sterilize depending on the volume of cans, roll and cover with a blanket until completely cooled. You can store tomatoes at room temperature.
