Salads from tomatoes for the winter
Tomatoes can be canned in many ways: salt, marinate, close in its own juice. Many housewives also cover the delicious salads from tomatoes for the winter. Several recipes of such salads are shared with their readers by the Country of Soviets.
Ukrainian salad
This salad is best prepared from brown or green tomatoes of medium size. To prepare a salad, we will stock up with such products:
2 kilograms of tomatoes
1 kilogram of bell pepper
0.5 kg carrots
0,5 kg of onions
500 milliliters of vegetable oil
300 ml of vinegar
200 grams of parsley root
50-100 grams of salt
30 grams of parsley greens
10 peas of black pepper
10 buds of a carnation
7-10 bay leaves
My tomatoes and cut into 4-6 slices. Pepper is cleaned of seeds and cut into pieces about 2 by 2 cm in size. Carrots and parsley root are cleaned and cut into cubes or straws. Onions are cleaned and cut into rings with a thickness of not more than 0.5 cm. Greens of parsley and finely chopped.
Vegetable oil is brought to a boil, boiled infor 5-7 minutes, and then let it cool to a temperature of about 70 degrees. In hot jars pour hot oil, put black pepper, bay leaf and cloves. Prepared vegetables are mixed, seasoned with salt and vinegar.
Densely fill the jars with vegetable oil vegetable mixture. Sterilize 50 minutes (for half-liter cans) or an hour (for liter), roll.
Czech salad
We have already presented the cuisine of the Eastern Slavs, it's time for a Western-Slavic culinary masterpiece - a canned salad of tomatoes in Czech. For him, we take the following ingredients:
tomatoes - 3 kilograms
Bulgarian pepper - 1 kilogram
onions - 1 kilogram
garlic - 5 heads
sweet pepper - 5 peas
To fill
water - 2 liters
sugar - 6 tablespoons
salt - 3 tablespoons
vegetable oil - 2 tablespoons
acetic essence - 1 tablespoon
For salad we take strong red tomatoes. Mine, cut into quarters. Onions and peppers are cleaned and cut into rings. Purified garlic is crushed (manually or with a press). Sterilize the jars, lay the layers of tomatoes, peppers, onions and garlic. We prepare marinade, bring to a boil and fill them with vegetables. Sterilize the cans with salad for 10 minutes (for half-liter) or 15 minutes (for liter). We roll it up, put it upside down and wrap it up before cooling down.
Tomato salad with bell pepper
Salads can be closed not only from fresh vegetables- Stewed salads of tomatoes are very popular for the winter, usually with the addition of other vegetables. Tomatoes are perfectly combined, for example, with Bulgarian pepper. To prepare 5 liters of salad, we take:
tomatoes - 3 kilograms
red sweet pepper - 1 kilogram
carrots - 1 kilogram
onions - 1 kilogram
vegetable oil - 400 milliliters
sugar - 300 grams
salt - 100 grams
table vinegar - 3 tablespoons
black ground pepper - 1 teaspoon
Vegetables, if necessary, we clean, wash and cut. Carrots three on a large grater. Pour the salt, mix, cover and leave for 12 hours. Then add sugar, vegetable oil, vinegar, pepper and cook for half an hour. Hot salad is laid out in sterile jars, rolled up and wrapped until completely cooled.
The Orange Miracle
Funny name, right? Prepared a salad of tomatoes and carrots. For its preparation we will need:
red tomatoes - 1.5 kilograms
carrots - 1 kilogram
sunflower oil - 1 glass
sugar - 100 grams
garlic - 100 grams
salt - 1 tablespoon
Ground black pepper - 1 tablespoon
acetic essence - 1 tablespoon
I cut my tomatoes. Purified carrots are passed through a meat grinder and mixed with tomatoes. We add sunflower oil, sugar, salt and stew for one and a half hours. For a quarter of an hour until ready, we add the garlic and ground black pepper, passed through the press. Five minutes before the readiness, we pour in the vinegar essence. Hot salad lay out on sterile cans and roll.
