Jam from a currant
Many people like to eat black and redcurrants, but this berries do not eat much. Therefore, most of the harvest of currants harvested for future use: they freeze, make compotes and jam. How to prepare jam from a currant for the winter?
Black currant jam
Jam can be cooked from both black and red currants. Let's start with black, perhaps. To prepare black currant jam, we need to take:
1.5 kg of sugar
1 kg of black currant
4 tbsp. water
Black currant, we separate from the hands andsorting out, removing garbage and spoiled berries. Water poured into a saucepan, bring to a boil and blanch in it berries for 3-5 minutes. Then we decant the water and use it to make sugar syrup.
In the boiling syrup we lower the berries and cook for5-7 minutes. Then the jam is cooled and let it settle for 6-8 hours. Then again we bring the jam from the currant to a boil, boil for a few minutes and let it settle. So repeat 3-4 times, after which we pour hot jam on prepared banks and roll.
Jam made of red currant
Red currant is also very suitable for making jams, especially large-berry varieties. To make red-currant jam, we need the following ingredients:
1 kg of red currant
1 kg of sugar
0.5 tbsp. water
My currants, we remove from brushes, we sort andlet's dry. Water poured into a basin, add sugar and bring to a boil, stirring constantly, so that the sugar dissolves. In the boiling syrup we put the currant and shake the pelvis so that the berries evenly sink into the syrup.
Bring syrup with berries to a boil and cook 20minutes. Then remove the pelvis from the fire and take the sample. To do this, you need to collect chilled jam on a spoon and tilt it: if the jam does not pour out but is held in a spoon, reminding jelly, it's ready. Ready-made currant jam is rolled into cans in the standard way.
Quick currant jam
To maximize the shape of berries, as well as the vitamins contained in them, you can cook a quick jam from the currant (it is also called jam-five-minute). For this we need to take:
1.5 kg of sugar
1 kg of red or black currant
1-1.5 tbsp. water
We separate the berries from the twigs, and we also go through mine. From the water and sugar, prepare the syrup and bring to a boil. We lower the berries in syrup, again bring to a boil and cook for five minutes. Then we pour the jam from the currant into sterile jars and immediately cork them.
Cream of black currant
From the currant can be cooked not only jam, but delicious jam. To prepare blackcurrant jam, we will need:
1.2 kg of sugar
1 kg of black currant
My berries are sorted and we pour into dishes, inwhich we will brew jam, and lightly mash. Add the sugar and boil the berries under the closed lid for 20 minutes. While the jam has not had time to cool down, we pour it into prepared cans and pasteurize 20-30 minutes at a temperature of 95 degrees.
Red currant jam
A redcurrant jam is no worse than a blackcurrant jam. To make a red currant jam, we'll take:
1 kg of red currant
0.5 kg of sugar
0.5 tbsp. water
First, prepare the sugar syrup. Sugar is poured into the water, mixed and heated until the sugar dissolves. Berries are sorted and washed, poured into syrup and cooked in two or three meals until ready, constantly removing the foam. The break between meals is small, only a few minutes.
Ready-made jam in hot form is poured over prepared cans and pasteurized at a temperature of 95 degrees for 20-30 minutes.
