How to make compote of berries?



The cooking of compotes of berries has its own nuances. For cooking it is better to use ripe, but stillSolid berries so they do not boil. Red currant compote



Red currant just refers to those berries that are filled with syrup instead of cooking. Compote of red currant berries is done quickly and simply. For its preparation we take:



  • 1 kg of red currant

  • 500 ml of water

  • 250 g of sugar


The beauty of this compote is that for it you can take berries with twigs. Well washed currant (twigs can not be removed) and a little dried. We sterilize the banks and densely pack berries in them.



Water with sugar is brought to a boil, so that the sugar is dissolved. Fill the syrup with a boiling syrup, cover with boiled lids and sterilize. After sterilization immediately roll.



Ready compote is obtained sufficiently concentrated, before serving can be diluted with its usual or mineral water.



Black currant compote



Excellent for cooking compote and "sister" of red currants - black currant. To prepare a compote of black currant berries, we will need:



  • 250 g black currant

  • 2 liters of water

  • 3 tablespoons Sahara


We sort out the berries and rinse them well. We put the berries in a colander.



Water poured into a saucepan, bring to a boil. We lower the colander into the water with the currant so that the berries are completely covered with water.



After 2-3 minutes we take a wooden spoon and wipe her berries through a colander right into the boiling broth. What remains in the colander, we throw out without regrets.



Add sugar to the boiling compote, boil for about a minute and turn off the fire. We pour out compote on cans, sterilize and roll up with boiled lids.



Compote of grapes



Fine northern grapes in fresh form is not liked by everyone, but compote from it turns out chic. In principle, you can prepare compote from sweet southern grapes. To make compote of grapes, we take:



  • 3 kg of grapes

  • 1 liter of water

  • 750 g of sugar

  • lemon


Grapes are thoroughly washed and carefully removed from the pedicels. We throw out bad berries, but put good ones in cans.



Water with sugar bring to a boil, a couple of minutes of boiling. The resulting syrup is cooled and poured them grapes into jars.



Lemon washing, cut slices and put on a slice in each jar. Banks with compote are sterilized or pasteurized, rolled up and set upside down for cooling.



Compote of cranberry



Compote of cranberries is not only delicious, but also useful - it can be used to combat colds, improve appetite and even raise the level of hemoglobin in the blood. To close the compote of cranberries, we will need:



  • 1 kg of large berries of cranberries

  • 600 g of sugar

  • 400 ml of water


Cranberries are sorted, carefully washed in running water, dried with a paper towel. We stack cranberries in prepared cans, filling them with 2/3.



We make syrup from water and sugar. Bring the water to a boil, pour sugar, mix thoroughly and remove the pan from the fire after completely dissolving the sugar.



Fill the cranberries with hot syrup, cover the jars with boiled lids and pasteurize them on low heat (15 minutes for liter cans, 20 minutes for 3 liter).



Immediately after pasteurization, we quickly roll up the jars, turn them upside down and let them cool.
