Cheesecake without baking

Traditional cheesecake "New York" could taste already many. It's a very tasty dessert, but it's long to cook. But now we are talking about a truly summer version of a cheesecake without baking.
By the way, remember that in both recipes for the preparation of cheesecakes, a measuring cup with a capacity of 250 ml.
Cheesecake without baking: recipe first
Since curd cheesecake is a summer dish, you can and should add a few berries to it. We offer you this cheesecake option without baking with strawberry topping. To make cheesecake you need such ingredients:
For the basis:
- 1 2/3 tbsp. cookie crumbs
- 1/2 tbsp. melted butter
- 3 tbsp. l. Sahara
For filling:
- 500 g cottage cheese
- 1/2 tbsp. Sahara
- 2 tbsp. vanilla pudding
- 1 tsp. strawberry flavor
For topping:
- 350 g fresh or frozen strawberries
- 1/4 tbsp. water
- 1/2 tbsp. Sahara
- 3 tbsp. l. starch
- fresh strawberry for decoration
So, start preparing cheesecake from cookies. Mix the cookie crumbs with melted butter and sugar. Place the mixture in a sliding form. Tamp out the mixture of cookies so that it will fit well on the base of the mold and on the sides, which will form a crust. Put the form in the refrigerator so that the oil stiffens. While the cake for the cheesecake is cooling, tackle the filling.
Beat curd and sugar with a mixer or blenderuntil a homogeneous soft mass is obtained. Add vanilla pudding and strawberry flavor. Continue to beat the mixture until a uniform consistency is obtained.
To prepare a cheesecake topping,Pound the strawberries. Add water, sugar and starch. Warm the sauce over the fire so that it thickens. Cool the prepared sauce. By the way, instead of starch, you can use gelatin, then you do not have to warm up the strawberry sauce.
When the base, filling and topping are ready, you cancollect your cheesecake without baking. Pour the entire filling on the base. Smooth the filling with a spatula. Top with strawberry sauce. Fresh cut the strawberries and decorate it with cheesecake. Now put the cheesecake in the fridge so it freezes.
By the way, after making cheesecake you can have strawberry sauce. Do not throw it away. The sauce can be frozen or stored in the fridge to water pancakes or ice cream.
Cheesecake without baking: recipe for the second
Of course, strawberries can not always be obtained to make dessert. Therefore, we offer you another recipe for cooking cheesecake without baking. You will need:
- 1 1/2 tbsp. cookie crumbs
- 1/3 tbsp. brown sugar
- 1/2 tsp. cinnamon
- 1/3 tbsp. melted butter
- 500 g cottage cheese
- 2 tsp. lemon juice
- 450 ml of creamy cream
- 1/3 tbsp. Sahara
Like the previous recipe, mix together the cookie crumbs, butter, brown sugar and cinnamon. Lay the resulting mass in a mold, level the base and place in the refrigerator until the oil is completely solidified.
Beat cottage cheese with lemon juice untilsoft mass. Add the cream and whisk the mass with a mixer until the filling thickens. Then add the sugar. Continue to whisk the stuffing until it becomes very viscous. Pour the filling on the frozen base. From above you can add any topping from fresh berries. Put the cheesecake in the refrigerator for a few hours, or better at night, so that it stiffens. Your cheesecake is ready without baking. Before serving remove the walls of the sliding form.
