Cheesecake "New York"
Cheesecake gradually ceases to be unusualan exotic dessert: it is served in an increasing number of cafes, and many housewives have already mastered the recipe for cheesecake at home. The Country of Soviets offers you to cook cheesecake "New York".



It's quite easy to make cheesecake "New York": you do not have to worry too much about the test, because the basis for dessert is made from shortbread cookies. We offer you several variants of the recipe for this cheesecake: they are all similar to each other in highlights, but differ in some ingredients and nuances of preparation.



Cheesecake "New York": 1st option



To prepare cheesecake according to this recipe, we need the following ingredients:



  • cheese "Philadelphia" - 600 g

  • Shortbread cookie - 200 g

  • fatty cream - 150 ml

  • powdered sugar - 150 g

  • Butter - 110 g

  • eggs - 3 pcs.

  • Vanilla essence - 1 tsp.


Grind the cookies in a crumb. Melt the butter and mix with the biscuits. We take a split shape with a diameter of 21-22 cm and evenly distribute the mixture of butter and biscuits along the bottom and sides. Preheat the oven to 160 degrees and put it there with a cheesecake base for 10 minutes, then take it out and let it cool down.



Cooking stuffing. We beat the Philadelphia cheese with a whisk with powdered sugar, until we get a smooth smooth mass. Continuing to beat, gradually add eggs, cream and vanilla. If desired, you can also add lemon zest. Do not whip too hard! If there is too much air bubble in the mixture after whipping, the cheesecake can swell and crack during baking.



Then you need to wrap the form with a double layer of foil. We take another form of a larger diameter, put it into a cheesecake mold and pour boiling water into a large form so that it reaches the middle of the sides of the inner shape. Preheat the oven to 160 degrees and bake the cheesecake for 80 minutes. If you lightly shake the shape with the finished cheesecake, the middle of the dessert should slightly shake.



We leave the finished cheesecake for an hour offoven with the door ajar. And a water bath, and cooling in a slightly open oven, is needed so that the filling of the cheesecake does not crack. Ready-made cheesecake "New York" is covered with a food film and put in the refrigerator for 4 hours. Before serving, carefully separate the cheesecake from the mold walls with a water-soaked knife, remove the mold edge, shift the dessert to a dish and decorate it at will.



Cheesecake "New York": 2nd option



You can try to make cheesecake "New York" and a slightly different recipe. We will need the following products:



  • 700 g of soft cream cheese

  • 500 g cookies

  • 150 g of butter

  • 100 g cream (fat content - 33%)

  • 3 eggs

  • 3 tbsp. l. sugar for the base and 3 tsp. - For filling

  • 3 tsp. fresh sour cream

  • 1-2 tsp. vanilla extract

  • 1 tsp. cinnamon

  • 1 tsp. ground nutmeg


We chop the cookies into a crumb. Add the melted butter, 3 tbsp. l. sugar, nutmeg and cinnamon. Mix to homogeneity. We take a demountable shape with a diameter of 26 cm and evenly distribute a mass of biscuits along it. The oven is heated to 150 degrees and bake the base for 15 minutes. On the bottom shelf it is desirable to put a bowl of water, into which, when baked, the oil from the mold will drain. Ready basis we cool.



Mix cream cheese, cream, sour cream, sugar andvanilla extract. One by one we drive into the egg mixture, carefully kneading the whisk after adding each egg. Carefully pour the filling into the base. We make sure that the filling does not flow out of the cake: the cheesecake can crack. Bake for an hour. Turn off the oven and leave the cheesecake for a quarter of an hour. We open the door and wait another 15 minutes, after which we cool the cheesecake and put it in the refrigerator for 6-10 hours.
