Base:



  • 110 grams of sweet oatmeal cookies

Filling:



  • 250 g of mascarpone cream cheese

  • 100 g of dark chocolate (75% cocoa)

  • 2 eggs, 2 tablespoons (30 ml) Baileys Irish Cream

  • 40g of sugar

  • 50 g raisins (optional)

  • 110 g of toasted nuts (optional)


Besides:



  • 100 g of dark chocolate (75% cocoa)


Preparation:


Make the base of the curd cake bychopping cookies using a rolling pin. We add nuts and melted butter, carefully mixing everything. Form the base of the pie 18 cm in diameter, about 7 cm high. Bake for 20 minutes at 200 ° C, then remove from the oven and allow to cool. Reduce the oven temperature to 150 ° C.



Melt the chocolate in a container on a hot panwater, trying not to allow the container to touch the water. Chocolate does not overheat. Add spoon mascarpone and French cheese in a large bowl and mix until smooth, using a mixer. Add the eggs and sugar and mix again before adding the melted chocolate and Baileys. Add raisins and nuts (optional).


Blend the base with a mixture, smoothing the rearside of the spoon. Bake in the center of the oven for 75 minutes. After that, turn off the oven, leaving the cheesecake inside, until it completely cools down - this will prevent the appearance of cracks.


To make chocolate curls or shavings, fordecorating the cake, you need to melt the chocolate and put it on a flat smooth surface to form a circle 15cm in diameter. Cool in the refrigerator for 45 minutes. Using a knife for cutting cheese or just a sharp knife, cut the whole surface of the chocolate, shaping the curls or shavings.
