Cheese cake Baileys
The amazing taste of cheese cake is obtained by adding a bit of liquor Baileys and a little bit of fantasy!
Ingredients (12 servings of pie):
Base
- 110 grams of sweet oatmeal cookies
- 25 g butter, melted
- 50 g of chopped nuts (toasted)
Filling
- 250 g of mascarpone cream cheese
- 200 g Fromage Frais (French cheese 8% fat)
- 100 g of dark chocolate (75% cocoa)
- 2 eggs
- 30 ml Baileys Irish Cream
- 40 g of sugar
- 50 g of red currant berries (optional)
Additionally
100 g of dark chocolate with a cocoa content of at least 75%.
Make the base of the curd cake bychopping cookies using a rolling pin. Add the nuts and melted butter, mix thoroughly. Form the base of the pie with a diameter of 18 cm, height about 7 cm. Bake for 20 minutes at 200 ° C, then remove from the oven and allow to cool. Reduce oven temperature to 150 ° C.
Melt the chocolate in a container on a hot panwater, trying not to let it touch the water. This should protect the chocolate from overheating. Add mascarpone and French cheese in a large bowl and mix until smooth, using a mixer. Add the eggs and sugar, stir again before adding the melted chocolate and Baileys. Add berries of red currant (optional).
Blend the base with a mixture, smoothing the rearside of the spoon. Bake in the oven for 75 minutes. After that, turn off the oven, leaving the cake inside until it completely cools (prevents cracks on the cake).
To make chocolate curls or shavings, fordecorating the cake, you need to melt the chocolate and put it on a flat smooth surface to form a circle 15cm in diameter. Cool in the refrigerator for 45 minutes. Using a knife for cutting cheese or just a sharp knife, cut from the entire surface of the chocolate, giving shape to curls or shavings. Sprinkle the surface of cheesecake with chocolate curls, sprinkle with cocoa powder. Serve with sour cream or cream.
