Profitroles: recipe

Profiteroles: test recipe
It does not matter which exactly you want to cook profiteroles. The recipe by which you will prepare the dough is always the same. Only the filling will change. So, To prepare a dough for profiteroles, you will need such products:
- 180 g flour
- 3-4 eggs
- 100 g of butter
- 1/2 tsp. salt
- 250 ml of water
Prepare the custard batter. To do this, boil water, add butter and salt to it. Bring the mixture back to the boil again and pour the flour into the pan. Remove the mixture from the fire and a wooden spoon, whisk the dough intensively for 20 seconds. As a result, the dough should move away from the walls of the pan and get a uniform consistency.
Let the test cool completely. At this time, preheat the oven to 200 ° C. In the cooled batter, enter the eggs. Dough should get the right consistency. Check the consistency of the dough by typing it in a spoon and tilt it. If the dough falls from the spoon without your help, then the eggs are no longer needed. Now the dough is ready for baking.
On the baking sheet, lay the parchment paper. Roll the balls from the dough the size of a walnut. Put the balls on the baking tray at the same distance from each other. Profiteroles are baked for 30-40 minutes. It is very important that during baking you do not open the oven, as profiteroles can lose their shape. Wait about 25-30 minutes, then you can open the oven to check your pastries. In each ball profiteroles make a hole so that it can pass the nozzle of your confectionery syringe. Return the profiteroles to the oven for another 5 minutes. Then you can take out the profiteroles from the oven and cool them before you start stuffing them.

There are so many options that you can stuff your profiteroles. We suggest you try to stuff the profiteroles with vanilla cream. To prepare a cream for profiteroles, you will need:
- 3 egg yolks
- 2/3 tbsp. Sahara
- 1 tsp. vanilla essence
- 1 tbsp. l. corn flour
- 1.5 tbsp. l. wheat flour
- 2 tbsp. milk
To make a cream, whisk egg yolks,vanilla essence and sugar. Then add two kinds of flour. In small portions, pour in the milk, each time mixing the cream well. Pour the cream into a saucepan and put it on medium heat. Constantly stirring the cream, cook it for 10-12 minutes (or until it starts to boil). After boiling, cook the cream for another 1 minute, stirring constantly. Completely cool the finished cream.
With cold cream, start your profiteroles. From above you can pour them with chocolate sauce. To prepare the sauce, mix 1/4 tbsp. freshly brewed coffee, 1/4 tbsp. cream and 200 g of dark chocolate. Put the mixture in the microwave for 2-3 minutes (maximum power). Each minute stir the sauce until it has a uniform consistency. Cream filled profiteroles can be poured with sauce.

- 350 grams of chicken liver
- 4 tbsp. l. sour cream
- 1 carrot
- 1 onion
- 1 tsp. salt
Clean the liver of the film and veins. Fry chicken liver in vegetable oil. Peel onions and carrots. Carrot grate, onion - finely chop. Fry vegetables in a frying pan with a liver, salt, you can also pepper to taste. Chop the stuffing in a blender until smooth mashed, then add the sour cream.
