Mushroom hodgepodge: recipe for winter



Autumn is the time of mushrooms. There is a huge number of recipes for winter harvesting. They can be dried, frozen, salted, marinated ... Mushroom halophyte, a recipe for the winter, will please many fans of mushroom dishes.







The composition of any recipes of mushroom saltwort includesdifferent kinds of mushrooms. Therefore, do not prepare only honey agarics. You can safely use ceps, butter mushrooms, birch bark, russula, mosses ... All that the forest will give! We offer three recipes for the preparation of a mushroom saline.

Mushroom hodgepodge for the winter with cabbage


To prepare a hodgepodge of cabbage with mushrooms for the winter, you will need for 10 half liter cans:




  • 2 kg cooked mushrooms


  • 1 kg of white cabbage


  • 1 kg of tomatoes


  • 1 kg of carrots


  • 0,5 kg of onions


  • 0.3 liters of vegetable oil


  • spices (bay leaves, black peppercorns, cloves, salt)

Cut the onions and carrots with straw, save them andTransfer into a saucepan, in which you will prepare a hodgepodge. Add the cut cabbage, tomatoes and vegetable oil, salt and simmer the vegetables over low heat for 20-25 minutes.



Now add the boiled mushrooms and continue to simmer the hodgepodge until it is completely ready. At the end, add spices.



Solyanku spread on prepared cans, close the lids and leave in a warm place until it is completely cooled.

Another recipe for a delicious saltwort.





For a salad of mushrooms and cabbage for the winter You will need:




  • 2 kg of tomatoes


  • 0.5 kg of white cabbage


  • 1.5 kg of carrot


  • 1.5 kg of onions


  • 0,5 kg of Bulgarian pepper


  • 1 kg of fresh mushrooms


  • 1 hot pepper


  • vinegar


  • 3 tbsp salt


  • spices (black pepper peas, bay leaf)




Recipe for cooking saltwort with mushrooms for the winter



Fresh tomatoes twist on a meat grinder (ifno tomatoes, you can replace them with 300-400 g of tomato paste), carrot rub on a large grater, chop cabbage. Bulgarian, hot peppers and onions thinly cut. Do not forget to cut the mushrooms into slices. Fold all the vegetables in a suitable container in which you will extinguish the hodgepodge for 40-60 minutes under the closed lid. 10 minutes before the preparation, add 1 teaspoon of black pepper peas, several laurel leaves and salt to the solyanka.



In the finished hodgepodge add a spoonful of acetic essence. Thoroughly mix everything. Solyanka with mushrooms and cabbage for the winter is ready. Now it can be decomposed into prepared banks and rolled up.







Mushroom hodge without cabbage



If the composition of the previous recipes of the mushroom salted meat included cabbage, then in this recipe it is not.





To make a hodgepodge with mushrooms for the winter, you will need:




  • 3 kg of mushrooms


  • 1 kg of onions


  • 2 kg of tomatoes


  • 5 tbsp sugar


  • 2 tbsp salt


  • 600 ml of vegetable oil


  • 1 tbsp vinegar




The recipe for the preparation of saltwort with mushrooms for the winter



Prepared for saltwort mushrooms should be washed, boiled and cooled. Now you can cut them into small pieces.



Tomatoes are covered with boiling water and remove from them peel,cut into small slices. Finely chop the onion. Cut the chopped onion into vegetable oil until golden, add the tomatoes and fry the vegetables for 5 minutes. Now you can put mushrooms here, mix everything thoroughly.



Add sugar, salt and vegetable to the frying panbutter. Well mix everything and stew for another half an hour. Remove the frying pan from the heat, add vinegar to the hodgepodge. Spread mushroom hodgepodge on sterilized jars, roll them with lids and leave it until completely cooled.
