Mushroom soup from dried mushrooms



For the preparation of mushroom soup with dried mushrooms, we need the following products:



  • 50 g of dried mushrooms

  • 4 tablespoons sour cream

  • 2 tablespoons butter

  • 2 potatoes

  • 1 carrot

  • 1 onion

  • 1 bay leaves

  • parsley, salt - to taste


Before preparing the soup, dried mushrooms are neededsoak in cold water, thoroughly rinsing them thoroughly in running water. Three to four hours after the beginning of soaking, we drain the water from the mushrooms, transfer it from the pan, fill it with clean water and cook for about half an hour.



While mushrooms are cooked, we clean potatoes and cut it with brusochkami. Half an hour after the beginning of cooking we take out the mushrooms from the pan and put the potatoes into the resulting mushroom broth.



Onions are cleaned and finely chopped, carrots are cleaned and three on a large grater. Fry onions and carrots in butter until golden. Add the mushrooms to the pan and simmer for five to seven minutes.



We shift mushrooms with carrots and onion into a pan with mushroom broth and potatoes, put the bay leaves and salt to taste. Bring the soup to a boil and cook for five minutes.



Ready soup spilled on plates, season with sour cream and sprinkle finely chopped parsley.
