Solyanka is an old and classic dish of Russiankitchen. It is revered for its taste and its many components. But few know that solyanka are different. Try to cook each of them and find your favorite recipe.

Recipe number 1. Meat solyanka



It is usually prepared on a good soup broth. For each type of soup - its broth and its secrets.



Necessary ingredients:




  • meat broth - 2 l


  • tomato paste - 5 tbsp. l.


  • onion - 2 pcs.


  • carrots - 1 pc


  • black olives - 100 g


  • pickled cucumbers - 4 pcs


  • Butter - 40 g


  • olive oil - 40 g


  • lemon - 1 pc


  • sausages, smoked meat, sausage - 300 g


  • salt and pepper - to taste.



Cooking method:




  1. onion shinkuem rings and fry on a mixture of oils;


  2. mix onions and pasta, spread on a baking sheet and bake until a ruddy crust 30-40 minutes over medium heat;


  3. in the pan send the grated carrots, finely chopped smoked meat and cook for 15 minutes, then combine with small cubes of chopped cucumber and tomato with onions and cook for another 10 minutes;


  4. 5 minutes before the end of cooking, pepper soup and pour 100 g of brine;


  5. we remove from the fire and leave to stand for an hour.



When serving on the table, we make out a lemon, cut olives and sour cream. Sprinkle the prepared dish with herbs from above.

Recipe number 2. Solyanka mushroom



This soup is especially good during fasting, when it's forbidden to eat meat. This first dish will bring an interesting variety to your menu.



Necessary ingredients:




  • mushrooms - 250 g


  • tomato paste - 2 tbsp. l.


  • onion - 100 g


  • carrots - 1 pc


  • pickled cucumbers - 2 pieces


  • Butter - 20 g


  • olive oil - 40 g


  • lemon - 1 pc


  • potatoes - 100 g


  • salt and pepper - to taste.



Cooking method:




  1. onion shinkuem rings and fry in a creamy-vegetable mixture, then add the pasta and all for 30 minutes on a small fire;


  2. mushrooms are cleaned, washing and lightly fry;


  3. mushrooms fill with water, add grated carrots, peeled and cut potatoes and cook for 15 minutes;


  4. at the end we put fried onions with tomato, cucumbers, pour half a glass of brine and cook for another 5 minutes. Solyanka is ready.



Mushrooms can be used any. Strongly not solite. Better then add to the plate, because, after standing, the soup becomes more saturated.

Recipe number 3. Fish solyanka



Necessary ingredients:




  • fish broth - 2 l


  • tomato paste - 3 tbsp. l.


  • onion - 100 g


  • carrots - 1 piece


  • black olives - 100 g


  • pickled cucumbers - 2 pieces


  • Butter - 20 g


  • olive oil - 40 g


  • lemon - 1 pc


  • sterlet or mackerel - 200 g


  • salt and pepper - to taste.



Cooking method:




  1. prepare onions with pasta as in the previous cases;


  2. in the broth we send the peeled and chopped pieces of fish, grated carrots and cook for 15 minutes,


  3. then we connect everything with chopped cucumbers and tomato with onions and cook for another 10-15 minutes;


  4. at the end of cooking, add brine, salt and pepper to taste.



We decorate each portion with herbs: dill, parsley, green onion.



To your hodgepodge came out really tasty,put more ingredients in it. You can combine soup and cook a meaty hodgepodge on a fish broth with mushrooms. Do not be afraid, experiment and try. You will definitely get your own version, the most original and extraordinarily delicious.
