Homemade marshmallows

Zephyr is one of the few confectionery products recommended for use in schools and kindergartens by the Institute of Nutrition of the Russian Academy of Medical Sciences. How to cook home marshmallowsto make it useful and delicious delicacy, tell the Country of Soviets.

Homemade marshmallow from apple puree
For cooking you will need:
- 6 large apples;
- 1 tbsp. Sahara;
- 2 tbsp. thick cream;
- 1 egg white;
- crushed ice in wide form.
Peeled ripe apples cut into halves andtake out the core. Put them in a mold and bake in the oven until softened. Slightly cool and wipe through a sieve. In the resulting mashed potatoes slowly pour out a glass of sugar, add protein and stir until a uniform consistency is obtained. Put the apple mass in a small glass bowl, then place it in a mold with crushed ice and beat until a white thick mixture is obtained.
Separately whipped cream add to the apple mixtureand mix well. The mixture for marshmallow is ready. Put it into small molds and put it in the freezer for a little while. Remove from molds and lay out on a pre-chilled dish. Homemade marshmallows can be served along with crispy biscuits (kurabiya).
Pineapple Marshmallow
To make a pineapple homemade marshmallow, you will need:
- 1 pineapple;
- 1.5 tbsp. Sahara;
- 4,5 tbsp. thick cream;
- 2 tbsp. l. gelatin;
- 2 tbsp. gelatin;
- cinnamon;
- ground nuts for powder.
Gelatin soak in 2 glasses of water and leave forswelling. Beat cream until thick. Peeled pineapple cut into small pieces, throw them into boiling water and boil over a small fire until the liquid evaporates completely. Cool the mass through a sieve. Add the whipped cream and sugar. Stir well until smooth.
Melt gelatin melt on fire, not leading up toboiling. Slightly cool and combine with pineapple puree. Stir well and pour into a cooled pudding mold. Put in the refrigerator until completely hardened.
Lower the form with the marshmallow into boiling water for 5-10 seconds. Then ready the home marshmaller carefully shifted to a chilled dish. To taste, sprinkle with cinnamon and chopped nuts.
Vanilla home marshmallows
This homemade marshmallow is very delicate, melting in the mouth. For its preparation we will need:
- 3 tbsp. Sahara;
- 250 ml of water;
- 1 tbsp. powdered sugar;
- 20 g of gelatin;
- 1 pack of vanillin;
- 1 tsp. citric acid;
- 1 tsp. soda.
Gelatin soak in 150 ml of cold boiled water. The remaining 100 ml of water should be poured into a saucepan, add 3 cups of sugar and cook for 5-7 minutes. In a swollen gelatin pour a thin stream of boiling syrup. Beat with a mixer until a thick consistency of 7-10 minutes. Then add citric acid, whip another 3 minutes, add vanillin and soda, beat the mixer for another 3-5 minutes.
Drain the dish with water. Using a pastry syringe to form a marshmallow and leave to dry for half an hour. You can use a spoon for laying, but the marshmallow does not turn out so beautiful. When the home marshmallow dries, you can connect the two halves and roll it in the sugar powder.
Home marshmallows can be decorate with chocolate icing.
