Cheese soup with champignons


Perhaps, this is one of the most common recipes of cheese soup with mushrooms. This version of soup is also called cheese soup in French. For its preparation we will need the following products:



  • 800 g of potatoes

  • 400 g soft soft cheese

  • 350 g champignons

  • 200 g chicken fillet

  • 1 medium onion

  • 1 medium carrot

  • dill greens

  • cooking oil for frying

  • Salt and pepper - to taste

Chicken fillet pour three liters of cold waterand boil until cooked. Boil the fillet from the broth and cut into small pieces. Potatoes, onions and carrots are cleaned and washed. Potatoes cut into small pieces, cut the onions finely, and grate the carrots on a large grater. We chop the mushrooms into thin slices.


Chicken soup is brought to a boil, addpotatoes. While it is brewed, fry the onion in vegetable oil until it is transparent, add the carrots and fry for another 2-3 minutes. Then we put mushrooms and fry until the liquid evaporates.


Add the sliced ​​meat to the broth, andChampignon. Cook until the potatoes are completely ready. Solim and pepper to taste (if the melted cheese is salted, you need to salt less than usual). Add the cheese and mix thoroughly to make the soup homogeneous, without lumps.

Cheese soup with porcini mushrooms


Dried white mushrooms will give soup a unique aroma, in addition, they are perfectly digested. To make a cheese soup with dried mushrooms, we need a set of ingredients:



  • potatoes - 700 g

  • processed cheese - 400 g

  • carrots - 150 g

  • onion - 150 g

  • Dried white mushrooms - 50 g

  • Salt and pepper - to taste

Dried white mushrooms are filled with hot water andleave for half an hour, and then take out of the water, dried and cut into small pieces. Pour into a saucepan three liters of water, bring to a boil, put mushrooms, salt to taste and cook for about half an hour.


We clean onions, carrots, potatoes. Onion finely chopped, carrots rubbed on a medium grater, potatoes cut into cubes. Add the potatoes to the mushrooms, cook for about 10 minutes, then put the onions and carrots into the pan.


Cook until the potatoes are ready, add processed cheese, pepper, if necessary, a little more salt, mix until a homogeneous consistency and remove from heat.


Cheese soup with mushrooms and trout


If you want to surprise your household or guests with something original, you can add to the soup, in addition to mushrooms and cheese, also pieces of trout. To prepare this soup, take:



  • trout fillets - 250 g

  • potatoes - 200 g

  • processed cheese - 150 g

  • champignons - 100 g

  • hard cheese - 100 g

  • carrots - 100 g

  • onion - 80 g

  • Butter - 20 g

  • starch - 1 tsp.

  • salt, pepper, greens - to taste

Mushrooms and vegetables are cleaned and cut into pieces. Bring the water to a boil, put the potatoes. Onions, carrots and mushrooms are fried in butter, add to the potatoes and cook until the potatoes are ready.


Cream cheese, cut it, hard cheese rub ongrater and add to the soup both types of cheese. When the cheese melts, mix the soup, salt and pepper to taste. Add the finely chopped trout fillets, cook for five minutes.


We pour the starch diluted with water and mix. Sprinkle the soup with finely chopped herbs (especially the taste of the soup will emphasize basil) and cook for another two minutes.
