Cutlets with mushrooms

Chicken cutlets with mushrooms
From chicken fillet and dried mushrooms it is possible to prepare very juicy, fragrant and tasty cutlets. For this we need the following ingredients:
1 chicken breast (fillet)
100 g of dried mushrooms
2 eggs
2 small onions
ground black pepper, salt - to taste

Fill dried mushrooms with cold water and leavefor 8 hours (you can pour mushrooms in the evening, leave for the night, and in the morning start cooking cutlets). After this time, drain the water, squeeze and finely chop the mushrooms.
Onions are cleaned, finely chopped and friedvegetable oil to transparency. Add mushrooms and fry until they are ready. To taste the mushrooms in the finished cutlets was softer, you can add one raw egg to the pan with mushrooms.
Chicken fillet finely chopped and put into a bowl. Add fried mushrooms, egg, salt and pepper to taste. Stir forcemeat for about five minutes. With wet hands, we make small cutlets and fry in vegetable oil for 1-2 minutes on each side.
Cutlets with mushroom filling
You can not add mushrooms to mince, but use them as fillings for cutlets. To prepare such cutlets with mushrooms, we should take the following products:
minced beef or pork-beef - 500 g
fresh mushrooms - 400 g
egg - 2 pcs.
onions - 1 pc.
vegetable oil - 3 tbsp. l.
greens - 1 beam
flour
pepper, salt - to taste
Onions are cleaned, cut into small cubes andfry 1-2 minutes to transparency. We shift the onion into a bowl, after letting the excess oil drain. Champignons mine, cut into strips and fry until half cooked. In the process of frying, it is necessary to scoop up the liquid released from the mushrooms.
Fried mushrooms are cut with a wide knife into smallpieces. Mix the chopped mushrooms with fried onions, add finely chopped greens. In a separate bowl we spread the stuffing, add one egg, salt and pepper, mix thoroughly.
Make a small ball of minced meat andflatten it into a flat cake. Spoon put in the center of a flat cake some mushrooms with onions, add them in half and form a cutlet. We cut the patties in flour, dip into a lightly beaten egg and fry in vegetable oil from both sides until ready.
Cutlets baked with cheese and mushrooms
In this case, the mushrooms are not used as stuffing and do not add to minced meat, but simply put on the finished cutlets, sprinkle it all with cheese and bake in the oven. It turns out just lick your fingers! To cook baked cutlets with mushrooms, we take:
500 g of beef ground beef
200 g champignons
150 g hard cheese
2 onions
1-2 slices of a loaf or white bread
2 cloves of garlic
sour cream or mayonnaise
milk
parsley greens
freshly ground pepper, salt - to taste

Onions are cleaned and finely chopped. Garlic is also cleaned and finely chopped or let through the press. The green of my parsley, dried and finely chopped. We rub the cheese on the grater. Champignons are mine, dried and sliced.
We heat a frying pan with vegetable oil,We put onions and garlic in it and fry for 2-3 minutes on medium heat. Then put half of the onions in a separate bowl. To the remaining on the frying pan, add the champignons and fry for 8-10 minutes, stirring. Solim and pepper to taste.
From the bread we cut the rind, the flesh is crumbled and pouredmilk. When the bread is swollen, squeeze it well. Mix the minced meat with the pressed bread, fried onion with garlic and herbs, salt and pepper to taste. Mixing the stuffing well, beat it several times, throwing it on the table or in a bowl.
We form round minced meatballs and fry them withtwo sides to a ruddy crust. Transfer the cutlets into a baking dish or on a baking tray. Each cutlet is lightly lubricated with sour cream or mayonnaise, we put a bowl of fried mushrooms with onions on top and sprinkled with cheese. Bake for about 25 minutes in the oven, heated to 180 degrees.
