How quickly to pickle cabbage for the winter
In stores, as a rule, year-round cabbage is on sale all the year round, so if you do not want to preserve it, you can simply make a quick pickling of cabbage.
First, prepare all the products:
cabbage (3 kg),
carrots and garlic, sugar (glass),
salt - 2-3 tablespoons,
about the same amount and acetic acid.

How to cook:
Cut cabbage into cubes (approximately 5-6 cm in size, but it is possible and more), chop the carrots on a large grater, chop the garlic finely or grind it in the garlic.
Add a glass of cold tap water to the pan. Pour in the vinegar and put the sugar with food salt. Wait for the sugar and salt to dissolve in the water.
Spread the cabbage with several layers, between which add carrot, black pepper and garlic.
Marinade pour cabbage and crush a jar of water. Do not worry if you think that the brine is too small - during salting the cabbage also emits liquid.
Let the cabbage steep for a bit more than a day. Then eat.

Good for pickling the following varieties: Moscow late, Kharkov winter, Dobrovodskaya. These varieties, in contrast to hybrid, are best suited for pickling and pickling. Hybrid species are used for longer storage.
Home salting cabbage in cans
A simple recipe for pickling cabbages in cans. Take 9-10 kg of cabbage, 1 kg of carrots, and 200 grams of edible salt. Finely cut the cabbage, grate the carrots and mix the vegetables, adding salt. Then carefully mix and distribute again over large jars (2 or 3 l). Hold for three days in a warm room, and then store in a refrigerator or cellar.
Another recipe for pickling cabbages in a can: in 10 liters of water, dissolve a kilogram of table salt. Chop the cabbage and let it sit in the brine for a few minutes. Then squeeze well and mix with carrots in grated form. Fold in cans and hold for 2-3 days. After pickling, cover the jars with plastic covers and put them in a cold place.
The recipe for quick salting of cabbage with beets
If salted cabbage with beets, then in the prepared form of cabbage will have a very beautiful pink shade, and, of course, a wonderful taste.
Ingredients for cooking:
4 kg of cabbage, 500 grams of beet,
40 grams of horseradish root,
a small head of garlic,
2 liters of clean good water,
100 grams of edible salt,
3-4 laurel leaves,
cloves - 2 pcs.,
black pepper - 9-10 peas,
half a glass of sugar.
Preparation:
Separate the green leaves from the cabbage, cut the rest of the large chunks.
Horseradish clean, rinse with water and finely grate.
Garlic chop any way convenient for you.
Beetroot wash, peel and cut into cubes.
Mix all the vegetables and tightly tamp them in a separate cup or pelvis.
Make a spicy marinade from the remaining ingredients, boil, boil for a few minutes, and then allow to cool to room temperature.
Pour cabbage brine and put pressure on it.
After 2-3 days you can eat. Place salted cabbage with beets in a clean jar and cover with a cap nylon. Keep in the fridge.
