Squash caviar


This dish is easy to prepare, it is donefast enough, and the taste of domestic caviar always surpasses the "store" analog. Recipes for cooking caviar are very diverse, and now we will consider one of them.


Ingredients:




  • 1 zucchini (take with a weight of about 2 kg),

  • 4-5 tomatoes,

  • 2 carrots (choose more carrots),

  • 2 large heads of onions,

  • 4 red bell peppers (medium pepper size),

  • a little greens (dill, parsley),

  • salt and pepper to taste, as well as vegetable oil.



How to cook: Wash all the vegetables, cut the zucchini and remove the middle with the seeds, remove the cuticles and cut into small pieces. Cut the tomatoes into 4-5 pieces each, just do the same with the other vegetables, removing the seeds and the stem (bell pepper) in them.

Download each type of vegetable individuallyblender and twist it. Fry onions in oil in a frying pan, while the fire should be moderate, not more than average. Stir the onion for 10-15 minutes. The onion in the blender will not be roasted because of the abundance of juice, but rather becomes passivated - this is what we need.


Add carrots to onions and stir again infor 10-15 minutes. Then put this mixture in a pan with thick walls. In the frying pan it is now necessary to put the tomatoes, and after 10 minutes after roasting, add the sweet pepper and hold for another 15 minutes on medium heat. Pour into a saucepan, where the onion and carrots are already.


Now it's time to mix with vegetableszucchini: add it to the pan, mix it, put it on the fire to a boil, transfer it to a weak fire and cover the pan with a lid, but not completely - steam should go out. Extinguish from an hour to two, add greens, check the readiness of the dish to taste.


Ready caviar lay out in liter orhalf-liter banks, which in advance sterilize. Place the jars in a pan for sterilization and keep them from 40-45 minutes (0.5 l) to an hour (liter jars). Tighten the covers and turn the jars, leaving to cool. If you want to speed up the process of canning caviar, add a drop of acetic acid.


A simple zucchini blank for the winter


This recipe is very simple, and you can use the resulting blank to make rolls or salads.


How to cook: my zucchini and cut them along thin layers, for this you can use a knife for shredding cabbage. We lay out on clean cans and add boiling water, and after it - 1 tablespoon of 9% acetic acid per half-liter jar. We put on sterilization for 5-10 minutes, close the lids and wrap it, leaving it to cool.


When you open jars in the winter with billet,Drain the liquid, and the zucchini themselves dip in flour, and then in a raw egg with salt and black pepper. Roast on vegetable oil, and the dish is ready for salads and rolls. It is very good to sprinkle zucchini with grated cheese with garlic and mayonnaise or stuffing rolls with Korean carrots - a perfect appetizer for a festive table.
