Recipes of zucchini caviar are very numerous, every housewife probably will have her own special recipe. You can, for example, try out this recipe. Ingredients we need the following:



  • zucchini - 3 kg (weight of pulp without skin and seeds)

  • carrots - 1 kg

  • onions - 1 kg

  • vegetable oil for frying - 300-400 ml

  • tomato paste - 2-3 tbsp. l.

  • 9% vinegar - 1 tbsp. l.

  • salt - to taste


Zucchini, onions and carrots are cleaned, cut andfry. Each vegetable must be fried separately, the frying oil can be used the same. Fried ingredients are ground in a food processor to the state of mashed potatoes.



Transfer the mashed vegetables into a saucepan oranother suitable container, mix and set to minimum fire. Stew for 20 minutes, add the tomato paste, vinegar, salt and stew for another 20 minutes. All this time, do not forget to stir the eggs frequently so that it does not burn out.



We sterilize the cans, pack them with ready-made caviar in a hot form and roll them up. Before the cooling down, the banks should be wrapped.

If you like spices and spices, you should more like this option of caviar. To prepare caviar from courgettes according to this recipe we will stock up with such products:



  • zucchini - 2 kg

  • onion 150 g

  • 9% vinegar - 2 tsp.

  • salt - 1 tsp.

  • sugar - 1 tsp.

  • garlic - 5-6 denticles

  • greens of dill and parsley, ground black pepper - to taste

  • vegetable oil for frying


To prepare caviar we take young zucchini. Mine them, cut into circles about a centimeter thick and fry in oil, let it cool. Onion shred and also fry in oil until golden brown. Garlic is passed through the press and rubbed with salt. Greenery finely chopped and lightly fried.



All the prepared ingredients are ground incombine or pass through a meat grinder. Add salt, sugar, vinegar and ground pepper to the caviar, mix well. We lay eggs on prepared banks. We sterilize the cans with caviar for 75 minutes for half-liter cans or 90 minutes for litters. We roll it up.

If you like Bulgarian pepper, you can safely add it to caviar. This recipe zucchini caviar does not require pre-frying vegetables (except carrots). So, we get the following products from the refrigerator:



  • squash - 5 kg

  • onions - 1 kg

  • carrots - 1 kg

  • Bulgarian pepper - 5 pcs.

  • garlic - 4-5 denticles

  • vegetable oil - 500 ml

  • tomato sauce - 0.5 tbsp.

  • sugar - 3 tbsp. l.

  • 70% vinegar - 2 tbsp. l.

  • salt - 2 tbsp. l.

  • pepper peas - 10 pcs.

  • vegetable oil for frying


Vegetables (except carrots) are mine, cleaned andWe pass through a meat grinder. Peeled carrots rubbed on a grater and lightly stewed with vegetable oil. Mixing the prepared vegetables, add all the other ingredients (except peppercorns) and put on a slow fire. Stew caviar for 2 hours, not forgetting to constantly mix. Pepper is added at the very end. Ready-made caviar is packaged in sterilized jars, rolled up.



Caviar roe for the winter: 4 version



Many people like caviar "as from a store", and they are looking for a way to prepare such caviar for the winter. Here is one recipe for such caviar. Ingredients need not so much:



  • 3 zucchini

  • 4-5 carrots

  • 4-5 bulbs

  • 4-5 tomatoes

  • Salt and sugar - to taste

  • cooking oil for frying


All vegetables are of medium size. All vegetables are cleaned (even with tomatoes peel). Zucchini cut into cubes, carrots rubbed on a grater, chop the onion very finely or crushed with the help of a food processor. Tomatoes are also sliced.



Fry all the vegetables separately, thenput everything in a large pan or other suitable container. Add sugar and large salt to taste. Stew for 15-20 minutes, then we rub caviar blender to a homogeneous consistency. Bring to a boil, pour into warm, sterile jars, roll up and cover with a blanket until completely cooled.
