Chanterelles with sour cream
Chanterelles are one of the most delicious mushrooms, especially if they are cooked correctly. Say, fried or braised chanterelles with sour cream - an amazing snack, which can both be served to the festive table, and to please her your household on a weekday.






Fried chanterelles with sour cream



Here is a simple recipe for cooking fried chanterelles with the addition of sour cream. To make chanterelles in sour cream according to this recipe, take:



  • 500 g chanterelles

  • 200 g sour cream

  • 150 g of onions (one large onion)

  • 3-4 pinches of black pepper

  • a few sprigs of parsley

  • salt to taste

  • cooking oil for frying


Chanterelles wash, clean and cut (quitesmall fungi can be fried entirely). Fold the chopped mushrooms in a frying pan and fill with water so that its level is about two-thirds lower than the level of mushrooms. Sprinkle a little and put on fire. Bring to a boil, cover and simmer for about ten minutes. Then remove the lid and cook for about ten minutes (until almost all the water has evaporated).



While cooking mushrooms, finely chop the onions and fryits to a light golden hue. When almost all the liquid is evaporated from the mushrooms, pour the vegetable oil into the frying pan, pour on the toast, increase the heat and fry for 7-10 minutes, stirring constantly. Then reduce heat, pepper, add sour cream and mix.



Extinguish the chanterelles in sour cream on minimal fire under the closed lid for five minutes. Sprinkle the prepared mushrooms finely chopped parsley and mix. You can serve to the table!



Chanterelles with sour cream and chicken fillet



Do you want something more satisfying? You can make chanterelles in sour cream with chicken fillet. To prepare this dish you will need:



  • 500 g chanterelles

  • 300 g sour cream

  • 250 g of chicken breast

  • 1 onion

  • vegetable and butter for frying

  • greens of dill, salt, pepper - to taste


Rinse the chanterelles in several waters, cleanseadhered mud, rinse and discard again in a colander, so that the glass is superfluous. Cut the mushrooms into small pieces of medium size (finely it is not necessary). Wash the chicken, drain and cut into thin strips or large cubes. Onion peel and cut into quarters of rings.



Melt a little butter in a frying pan,add the vegetable and heat. In the heated oil, put the chicken and fry for a minute on high heat, stirring constantly. Salt and pepper the meat, transfer to a plate.



In the same pan put chanterelles,salt and bring to a boil over medium heat. Prepare the mushrooms until the liquid released from them completely evaporates, stirring occasionally. Add a little oil and fry for 1-3 minutes.



Lay the chanterelles to the fried chicken fillet. Add the butter to the pan, lay the onion, lightly salt and fry on low to medium heat until soft (about 20 minutes). Then add the chicken with mushrooms to the onions, stir, add sour cream and stir again.



Cover the frying pan with a lid, reduce the heat tominimum and simmer for five minutes. Remove from heat, season with salt and pepper to taste, add finely chopped greens of dill and mix. Cover and let stand for five minutes, then serve with mashed potatoes.



Chanterelles with sour cream and potatoes



Another nourishing dish, which may well replace the whole dinner, is chanterelles with potatoes and sour cream. It is best to prepare this dish with a young potato, but the usual will come down. Prepare such products:



  • chanterelles - 1 kg

  • potatoes - 800 g

  • sour cream - 400 g

  • onions - 2 pcs.

  • vegetable oil - 2 tbsp. l.

  • parsley and dill greens, salt, pepper - to taste


Chanterelles are cleaned, rinse in running water andcut it. Wash potatoes, peel and boil in salted water almost until cooked (10-15 minutes after boiling). Allow the potatoes to cool and cut into large pieces. Peel onion and finely chop.



In a deep frying pan pour in the vegetable oil andfry onion until golden brown. Add the mushrooms and wait until all the liquid that has separated from them evaporates, then fry for another 10-15 minutes. Salt to taste.



Add sour cream and cook for another 10 minutes, afterput the potatoes and cook until done. At the very end of the preparation, add finely chopped greens, pepper and salt to taste, stir.
