Shrimp soup

Creamy soup with shrimps

For cooking, you will need:
- shrimp - 300 g
- cream 10% - 120 g
- cream cheese - 30 g
- water - 500 ml
- lemon - 1 pc.
- sweet pepper - 120 g
- onion green - 50 g
- Butter - 80 g
- a mixture of Italian herbs, salt, pepper, bay leaves - to taste
Preparation
Shrimp must be thawed, washed undercold running water. In a small saucepan pour the water for broth, boil. Dip the prawns into the water, add salt, a mixture of Italian herbs and bay leaves, juice of half a lemon. Cook for about 1.5 minutes. Then remove the broth from the fire.
The resulting shrimp broth should be filtered through gauze or a very fine sieve. To leave while aside. Next, you need to clean the shrimps from the shells, then cut them into small cubes.
Cream should be poured into a saucepan and put it on a low heat until it starts to boil, add the cream cheese. With a blender, you need to mix the cream and cream cheese until smooth.
At the next stage of soup preparationchop the green onions and sweet peppers. Stir the mixture on butter for about 3 minutes. Now add prawns, as well as cheese-cream mixture and keep on medium heat with constant stirring until the mixture becomes thick.
The final step in making soup is a mixpreviously prepared ingredients. Boil the shrimp broth, add the stewed vegetables with prawns and cream, cook on low heat for 2 minutes. If necessary, add salt, pepper. Serve to the table, sprinkling finely chopped green onions and adding to each plate on a slice of lemon.
Tomato soup with shrimps
This piquant soup with a gentle creamy consistency is good for lunch or dinner, because it is hearty and tasty. Cook it best in a bowl with a thick bottom, so that it does not burn. Traditionally tomato-shrimp soup served to the table with croutons, they can be prepared from cubes of white bread, sprinkled with olive oil with garlic and Provencal herbs, and then dried in the oven.
For cooking, you will need:
- shrimps frozen peeled - 200 g
- olive oil - 4 tbsp. l.
- tomatoes - 4 pcs.
- carrots - 1 pc.
- onion white - 1 pc.
- garlic - 3 cloves
- rosemary dry - 0,25 tsp.
- oregano dry - 0.25 tsp.
- salt, pepper - to taste
Preparation
Prepare ingredients for soup: tomatoes peeled from the skin by making cuts on them and chopping them with boiling water, and then cut into cubes, chop the onions and garlic finely, grate the carrots on a large grater.
Pour a little olive oil on a frying pan,to warm. When the frying pan warms, fry for a couple of minutes in olive oil garlic, adding spices to it, then add the onion to the garlic and fry for 2 more minutes. After this, add carrots and fry for about three or four minutes. Then add the tomatoes and keep the resulting vegetable mixture on low heat for another 10 minutes.
Ready frying should be put in a saucepan and pour about 2-3 liters of boiling water. Cook on low heat for 10-15 minutes. Then you need to remove from the heat and blend the vegetables with a blender.
In the resulting cream soup add thawed peeled shrimp, then put the soup on the hotplate again and boil for about 10 minutes on a small fire.
Soup should be served at the table with croutons (crunches) and greens.
