Shrimp salad "Snake"
As a snack, you can serve a shrimp salad, laid out as a symbol of the coming year - a snake. To prepare this dish for New Year 2013 we will need to take the following products:
200 grams of frozen shrimp
50 g of cheese
2 potatoes
2 eggs
2 fresh cucumbers
2 tbsp. l. mayonnaise
salt to taste
olive for decoration
To defrost the frozen boiled shrimp,do not need to boil them. Just pour the prawns with boiling water for five minutes, and then drain the water. If you boil the shrimp, they can become stiff, and with this method of defrosting their meat remains juicy. Defrosted prawns are cleaned from the shell. If they are large, you can cut them into halves.
We boil potatoes in a uniform in saltedwater, clean and cut into cubes. Eggs boil hard, clean and also cut into cubes. Cucumber, one cut into cubes, and the second - thin circles. Cheese should also be cut into cubes.
We put into a bowl of shrimp, potatoes, eggs,cheese and diced cucumber. Salt to taste, season with mayonnaise and mix thoroughly. We put the prepared salad on a dish in the form of a snake and make "scales" from the circles of a cucumber. Olive cut into two halves and make them eyes.
Tartlets with salmon and sour cream
If you decide to organize an informal New Year's party with a buffet instead of a traditional feast, be sure to prepare this delicious snack. To make these New Year tartlets, we will stock up with such ingredients:
300 g slightly salted salmon
200 g sour cream
160 g of flour
100 g of butter
2 eggs
1 egg yolk
a pair of sprigs of dill, green onions and parsley
salt
Flour is poured into a bowl, add a pinch of salt andthere also spread butter. We cut the butter with a knife to make butter-flour crumb. In the crumb we add the egg yolk and knead the dough, then remove it in the refrigerator for half an hour. We tear off small pieces from the dough, roll them out and lay them out in molds for tartlets, forming the sides.
Then proceed to prepare sour cream sauce. Mixer whisk sour cream with eggs, add finely chopped green onions and dill, pinch of salt. Thoroughly mix. Sour cream sauce spread in tartlets. Bake the tartlets for 20 minutes at a temperature of 180 degrees.
The fillet of salted salmon is cut into thin plates, we fold each plate in the form of a rose and stack it on top of the tartlets. We decorate each tartlet with parsley leaves.
Salmon with oranges
Salmon baked with oranges is an incredibly tasty dish, very simple to prepare. Of course, the salmon is not cheap, but on New Year's Eve you can pamper yourself. To prepare this dish we will need:
salmon fillet - 500 g
orange - 1 pc.
olive oil - 1-2 tbsp. l.
small bunch of parsley
by a pinch of oregano, freshly ground black pepper and salt (preferably sea)
Orange my and cut into circles, not cleansing ofskin. We sprinkle salmon oregano, salt, pepper and put in a heat resistant form. Sprinkle the fish fillet with olive oil, overlay it with orange slices and leave it for about half an hour, so that the fish will marinate.
Bake the salmon for 15-20 minutes under a grill or in an oven, heated to 200 degrees. Before serving, sprinkle with finely chopped parsley.
