Festive second courses
The real nail of the New Year's table is the second (main) dish. It should appeal not only to guests, but also to the symbol of the coming year. The symbol of 2012 is the black water Dragon, therefore festive second courses it is desirable to cook from fish to please the owner of the year who prefers the water element.






Baked pike



The festive second dishes from pike will make your New Year's table look really rich. Why not bake pike and potatoes for the holiday? To prepare this dish we take:




  • pike

  • potatoes - 1 kg

  • boiled mushrooms

  • onions - 2 pcs.

  • eggs - 2 pcs.

  • flour - 2 tbsp.

  • mayonnaise

  • salt, pepper - to taste

  • cooking oil for frying


We clean the pike, remove the tail and head, and the trunkcut into portions. Mix the flour with salt, roll the pieces of fish in this mixture and fry in vegetable oil. We bake the pan with oil, we put fried pieces of fish into the center.



Onions are cleaned and cut into half rings. Each pike is stuffed with onions and boiled mushrooms. Eggs boil, cool, clean and cut into circles. On the fish lay the remaining onions and circles of eggs.



We peel the potatoes, cut them into mugs and fry them.in vegetable oil until half cooked. We spread the potatoes on a baking tray around the pike, salt and pepper to taste, grease with mayonnaise. Bake until ready (20-25 minutes) in the oven, preheated to 200 ° C.



Jellied with shrimps



Festive second courses do not necessarily have tobe hot, and instead of fish you can take seafood. Portion jellied with shrimps looks effectively on the festive table, and it is prepared very simply. For its preparation we will need:



  • 300 grams of boiled shrimp

  • 1.5 tbsp. chicken broth

  • 20 g of gelatin

  • 2 peas of black pepper

  • 2 cloves of garlic

  • 1 tbsp. lemon juice or vinegar

  • 1 tsp Sahara


We clean the shrimps. We do not need to throw out heads - they will still be needed for us to flavor the broth and make its taste more vivid. Chicken broth is brought to a boil, we pour the shrimp heads. We add vinegar or lemon juice, sugar, pepper, garlic to the broth (the pricks must first be crushed with a knife or passed through the garlick).



While our broth is infused, pour a glasscold water gelatin and wait until it swells. After that, heat water with gelatin on a small fire until gelatin dissolves (it is important not to allow it to boil, otherwise it will lose its gelling properties).



Broth filter, add it gelatinsolution and mix. We take small forms for cupcakes, pour a little broth in them and let it freeze. Then spread on the frozen broth of shrimp and pour broth up. We remove molds in the cold, so that the jellied is frozen.



Ready to be poured carefully removed from the molds and put on a dish. You can decorate the jellied with lemon and greens.



Pancake cake with salmon



If you are bored with standard festive second dishes, you can surprise your guests with an unusual pancake cake with salted salmon and avocado. Real jam! To prepare this dish we will need the following ingredients.



For the test:

  • eggs - 3 pcs.

  • milk - 2 tbsp.

  • flour - 1,5 tbsp.

  • vegetable oil - 2 tbsp.

  • starch - 0.5 tsp.

  • soda - 1 pinch

  • salt to taste


For filling:

  • salted salmon - 200 g

  • mayonnaise - 75 g

  • sour cream - 50 g

  • avocado

  • dill


Mix in a bowl an egg and a half glass of milk. Add the sifted flour, salt, starch and soda. We introduce the remaining milk (it should be warm) into the mixture, constantly rubbing the dough with a spoon made of wood. Add the vegetable oil and knead the dough to a homogeneous consistency without lumps. Fry the necessary number of pancakes in vegetable oil.



Avocado clean, extract the stone and cutin small pieces. Dill finely chopped. We combine pieces of avocado, mayonnaise, sour cream and dill, we rub with a blender. We put on the dish two pancakes, grease the filling, lay out thinly sliced ​​slices of salmon. Then we put two more pancakes, we grease with a stuffing, we put salmon - and so while the ingredients do not end. We top the top pancakes with a thin layer of filling and decorate with "roses" from salmon.
