Dishes from asparagus: recipes of soups
Tasty and useful asparagus can not only be cooked: dishes from asparagus are of great variety. You can, for example, use asparagus to make soups, because spring and summer - it's time to include light vegetable soups in your diet.






Asparagus soup with asparagus



Delicate soup-puree - a wonderful summer dish. To prepare this dish from asparagus we will need such products:



  • 1.5 liters of chicken broth

  • 0.5 kg of asparagus

  • 3 onions

  • 1 tbsp. cream

  • 5 tbsp. l. butter

  • 2 tbsp. l. flour

  • allspice

  • salt


We clean asparagus and cut into slices. Onions are cleaned, cut and wessed in 2 tbsp. l. butter. The remaining oil is melted in a saucepan, pour the flour and sweet pepper. Stir, pour broth and bring to a boil. We put the asparagus, reduce the heat to a minimum and cook for 20 minutes. The soup is filtered, rubbed through the sieve and mixed with the broth. We add cream, salt to taste. We warm it up, not bringing it to a boil, and serve it to the table.



Chicken soup with asparagus



Many dishes from asparagus can be cooked only in season, when there is fresh asparagus. And this soup asparagus needs canned, so it can be cooked all year round. To make it, we'll take:



  • 300 g boiled chicken (white meat)

  • 100 grams of canned asparagus

  • 100 g of canned corn

  • 12 champignons

  • 2 tbsp. chicken broth

  • 2 tbsp. l. diluted with water corn flour

  • 0.5 tbsp. l. sea ​​salt

  • 1 tsp. sesame oil

  • green onion


Chicken soup is brought to a boil, addchopped mushrooms and cook for 2-3 minutes over low heat. Pour in the corn flour, diluted with water, and cook until thick, stirring. Then we reduce the heat, add asparagus, corn and thinly chopped chicken. We warm well on low heat, salt. Before serving, add sesame oil and sprinkle finely chopped green onions.



Beef soup with asparagus



If you want to try more hearty asparagus dishes, cook this beef soup with canned asparagus. We will need to take such products:



  • 4 tbsp. chicken broth

  • 130 g fillet beef steak

  • 100 grams of canned asparagus

  • 2 egg whites

  • 2 tbsp. l. dry sherry or rice wine

  • 2 tbsp. l. divorced corn flour

  • 1.5 tsp. sea ​​salt

  • ground white pepper


Broth and wine pour into a large saucepan,add salt and bring to a boil. Reduce the heat and pour in the corn flour, stirring constantly. Increase the fire, once again bring to a boil, do not stop stirring, and boil until thick. Again we reduce the fire.



Beef steak is very thinly cut, salt andseason with ground white pepper. Canned asparagus thinly chopped. We put steak and asparagus in broth, we prepare 10 minutes. Egg whites slightly whisk, bring the soup to a strong boil and a thin trickle of protein into it.



Salmon soup with asparagus



Asparagus blends well with fish, so you can include in your diet dishes from asparagus and, for example, salmon. Try to cook, say, here's a soup. To do this, take the following ingredients:



  • 1 liter of vegetable broth

  • 400 g of white asparagus

  • 400 g of green asparagus

  • 350 g salmon fillets

  • 300 g spinach

  • 3 tbsp. l. flour

  • 3 tbsp. l. cream

  • 2 tbsp. l. oils

  • 2 onions

  • green onion

  • white pepper

  • salt


Asparagus is cleaned (white - to the top, green -only in the lower third) and cut into strips about 3 cm long. We sort out spinach. Onions are cleaned and cut into pieces. In a saucepan, heat the oil, put the onions and fry for two minutes. Then we pour out the flour and give a little puff. Fill with broth and bring to a boil.



We put asparagus in the broth and cook for 8 minutes. Then add the spinach and cook for another 4-5 minutes. Cut the fillet of salmon with long thick strips, put it in the soup. Remove the pan from the fire and let it stand for three minutes. We pour cream into the soup, salt and pepper to taste, sprinkle finely chopped green onions.
