Salad with asparagus
Asparagus is not only delicate taste, but alsosignificant benefit to our body. So do not miss the opportunity to include this delicious vegetable in your diet. You can cook, for example, salad with asparagus.






Salad with asparagus and carrots



Such a salad with asparagus is prepared very simply, and it takes a little for the ingredients. We will need these products:



  • 300 g of asparagus

  • 200 g of mayonnaise

  • 3 carrots

  • green onion

  • salt


Carrots are cleaned, finely chopped and stewed. Asparagus washed, cleaned (it is cleaned like a rhubarb) and also stew, but separately from carrots. Cooked asparagus is cooled and cut into pieces. Mix asparagus with carrots, salt to taste, season with mayonnaise and sprinkle finely chopped green onions.



Salad with asparagus and green beans



But one quick and simple salad with asparagus. For its preparation we should take such products:



  • 300 g of asparagus

  • 200 g of string beans

  • 50 g of parsley greens

  • 50 ml of vegetable oil

  • 30 ml of vinegar


We clear the asparagus and boil it in salted water, previously tied into a bun. Carefully take out, trying not to break the shoots, and lay on an oblong dish (a bundle, of course, you need to untie).

We cut the bean string along and boil it insalted water. We put the ready bean into a colander, and wait until the liquid drains, and the bean cools. Beans spread around asparagus. We water the asparagus with vegetable oil, and the beans with vinegar.



Asparagus salad with vinaigrette sauce



A delicate taste of asparagus can be shaded with a variety of sauces. Why not serve a salad of boiled asparagus with vinaigrette sauce? We will need the following ingredients:



  • 500 g of asparagus

  • 1 onion

  • 1 steep egg

  • 3 tbsp. l. vegetable oil

  • 1 tbsp. l. chopped parsley

  • 1 tbsp. l. chopped green onion

  • 1 tbsp. l. chopped cherry leaves

  • 1 tbsp. l. vinegar

  • 0.5 tsp. mustard

  • pepper

  • salt


We clear asparagus, boil in salted water andwe cool it. Finely chop the steep egg and onions, stir with greens. We fill with vegetable oil, vinegar and mustard, add a pinch of salt and pepper, mix. Mix the sauce of the vinaigrette with the asparagus.



Salad with asparagus and beef



If you want something more satisfying, you can make a salad with asparagus and beef. For this we need to take such a set of products.



For salad

  • 250 g of fried beef

  • 200 g canned walnut

  • 2 tbsp. chopped asparagus slices

  • 1 tbsp. cherry tomatoes, cut into halves

  • 1 carrot


For sauce

  • 0.25 tbsp. vegetable oil

  • 2 tbsp. l. red wine vinegar

  • 1 tbsp. l. finely chopped green onions

  • 1 tbsp. l. soy sauce

  • 1 tbsp. l. sesame oil

  • 1/8 tsp. ginger


First, prepare the sauce. We take a jar with a twisting lid, mix all the ingredients in it and shake it well. The sauce is ready!



Carrots are cleaned and cut into thin slices. Blanch it with asparagus in a shallow saucepan, throw it back in a colander and rinse it in cold water.



We take a big salad bowl, combine asparagus, carrots, beef, water chestnut and tomatoes in it. Pour the sauce, mix and put in the refrigerator for an hour.



Salad from pickled asparagus



To give boiled asparagus a more piquant taste, you can pre-marinate it. To prepare a salad from pickled asparagus we will need the following products (based on 1 bundle of asparagus shoots).



For marinade

  • 2/3 tbsp. white wine vinegar

  • 1/2 tbsp. olive oil

  • 1/3 tbsp. Sahara

  • half bulbs

  • half a sweet green pepper

  • salt

  • pepper


For sauce

  • 1/3 tbsp. mayonnaise

  • 1/3 tbsp. natural yoghurt without additives

  • fresh dill greens


Cut off the hard ends of the shoots of asparagus andboil until cooked. Transfer the asparagus into the cold water and turn it over to the colander, letting the water drain. Finely cut the green pepper and onions, mixed with vinegar, butter and sugar, salt and pepper to taste. The resulting marinade is filled with asparagus and set for several hours in the refrigerator.



To prepare the sauce, mix yogurt withmayonnaise, we add finely chopped greens of dill and 3 tbsp. l. marinade. Leaves of green salad we lay on a large dish, on them we spread marinated asparagus and we pour with sauce.
